A Study on the Relationship Between the Volatile Composition of Moscato and Prosecco Grappa and Enzymatic Activities Involved in its Production

The enzymatic transformations during storage of pomaces greatly affect the composition of Italian Grappa. This study examines the impact of pectin methylesterase (PME), beta- glucosidase (beta G) and esterases (ESTs) on the composition of Moscato and Prosecco Grappa. Grape pomaces were fermented for differing periods of time. After protein extraction, the enzymatic activities were detected by spectrophotometric and electrophoretic methods. To determine by gas chromatography the evolution of methanol, terpenes, ethyl acetate and lactate in pomaces and Grappa samples, distillations by Cazenave equipment and a traditional copper alambic were performed. Sensorial evaluation was carried Out. There is a close relationship between the PME activity of grape pomaces, the degree of pectin methylation, and the concentration of methanol before distillation. The results obtained Suggest that inhibition of grape pomaces PME may be adopted to control methanol concentration. The glycosidases of grape and/or yeast seem to have a limited effect on the release of volatile compounds from glycosides located in grape skins. As regards the contribution of grape and microorganism esterase, several hypotheses are discussed.

Summary: The study assessed the total phenolic content, phenolics profile, and antioxidant activity in grape pomace, identifying epicatechins as the most representative phenolic compound. Grape pomace powder was shown to be a promising natural antioxidant for delaying the oxidation of corn oil, as evidenced by significant differences in Rancimat testing between corn oil treated with GPP and the control.

Beta-Glucans of Cereals: Functional and Technological Properties

Impact of Agronomic Treatments on the Enzymatic Browning of Eggplants (Solanum melongena L.)

Summary: This study evaluated the effect of fertilization techniques and grafting on polyphenol oxidase (PPO) activity and colorimetric parameters in cultivated eggplants. Fertilization alone significantly increased PPO activity, while fertilization combined with grafting decreased PPO activity. There was a significant positive correlation between PPO activity and the a* values of the eggplants. Additionally, eggplant slices exposed to room temperature for 60 minutes showed a significant increase in PPO activity and color parameters.

The concept of regular wine consumption originated from Alvise Cornaro's teachings in the 16th century, where he advocated for wine to be consumed regularly. Wine played a central role in medieval society, being consumed in large quantities and used as a medicine. While moderate wine consumption has been linked to health benefits, any level of alcohol intake is now recognized as harmful. The modern wine industry is addressing this issue by producing wines with reduced alcohol content. However, wine continues to be consumed for pleasure and its social role.

Monitoring of the use of spent grape pomace after industrial distillation as a potent antioxidant and enzymes inhibitor

Summary: This study evaluated the antioxidant activity and inhibitory effects on enzymes related to non-communicable diseases of white and red spent grape pomace (SGP), as well as the impact of storage on these bioactivities. The results showed that some of the bioactivities were not preserved after distillation, but improved after 1 month of storage. The phenolic profile remained stable during storage while the inhibition of α-glucosidase (AG) was enhanced. These findings confirm the remaining bioactivity of SGP, demonstrating its potential use in the food industry.
