Summary: Dendritic cell activation is characterized by sustained commitment to glycolysis, which is required for survival in DC subsets expressing inducible nitric oxide synthase (Nos2) due to NO-mediated inhibition of mitochondrial respiration. PWD mice, with preserved mitochondrial respiration and enhanced postactivation survival, phenocopy human monocyte-derived DCs, suggesting the need for mouse genetic diversity in immunology research.

Summary: Listeria monocytogenes is a foodborne pathogen that can form biofilms on various surfaces and express different genes in biofilm and planktonic cells, which could affect its stress tolerance and virulence. This study investigated the expression of ten key stress response and/or virulence-related genes in three different strains of L. monocytogenes and found strain-dependent differential gene expression between biofilm and planktonic cells, suggesting the importance of considering strain variability in studies and eradication methods of pathogenic biofilms.

Summary: Ceviche is a traditional marinated raw fish dish commonly consumed in Pacific coastal countries. This study aimed to assess the viability of bacteria isolated from fish after the preparation of ceviche. The results showed that different strains of bacteria had varying survival rates and pathogenic potentials during the preparation process, and certain ingredients in ceviche exhibited antibacterial properties.

Summary: The pathogen Listeria (L.) monocytogenes exhibits different gene regulation modes in response to high pressure processing, including survival mode, repair mode, and re-growth mode. This allows for the timely activation of transcription factors associated with immediate stress response, followed by repair and re-growth to survive and recover from extreme conditions. The findings provide insights for potential design of specific strategies to target genes or mechanisms to prevent L. monocytogenes recovery during food storage under high pressure conditions.

The effectiveness of this combination was higher than using fructooligosaccharides or Lactiplantibacillus plantarum alone in inhibiting Listeria monocytogenes.
