Summary: This study developed polysaccharides of Houttuynia cordata stems (HCPS)-whey protein concentrate (WPC) complex and leaves (HCPL)-WPC complex, and investigated their stability, structure, and antioxidant activity. The results showed that stability varied with different proportions, and the HCPL-WPC complex exhibited better stability and antioxidant activity. The findings provide reference for the application of Houttuynia cordata polysaccharides in food.

Summary: In this study, a hot buffer soluble Houttuynia cordata polysaccharide (HBHP-3) with a molecular weight of 397.4 kDa was isolated. HBHP-3 effectively inhibited NO secretion and the mRNA expression of pro-inflammatory cytokines in macrophages in a dose-dependent manner. Furthermore, HBHP-3 inhibited the activation of the NF-Kappa B pathway.

Summary: In this study, the total polyphenol content, total flavonoid content, and antioxidant activity of Houttuynia cordata extracted with ethanol and distilled water were analyzed. The results showed that the ethanol extracted Houttuynia cordata had higher total polyphenol content, total flavonoid content, and antioxidant activity than the distilled water extracted Houttuynia cordata. Therefore, the ethanol extracted Houttuynia cordata was used to prepare Houttuynia cordata extract loaded polyurethane (HCE/PU) nanofibers. The addition of Houttuynia cordata extract increased the crystallinity, thermal decomposition temperature, and thermal stability of the HCE/PU nanofibers, which can be attributed to the presence of quercitrin and quercetin crystallite solids in the extract.
