On Governance, Embedding and Marketing: Reflections on the Construction of Alternative Sustainable Food Networks

Based on the reconstruction of the development of 14 food supply chain initiatives in 7 European countries, we developed a conceptual framework that demonstrates that the process of increasing the sustainability of food supply chains is rooted in strategic choices regarding governance, embedding, and marketing and in the coordination of these three dimensions that are inextricably interrelated. The framework also shows that when seeking to further develop an initiative (e.g., through scaling up or product diversification) these interrelations need continuous rebalancing. We argue that the framework can serve different purposes: it can be used as an analytical tool by researchers studying food supply chain dynamics, as a policy tool by policymakers that want to support the development of sustainable food supply chains, and as a reflexive tool by practitioners and their advisors to help them to position themselves, develop a clear strategy, find the right allies, develop their skills, and build the capacities that they need. In this paper, we elaborate upon the latter function of the framework and illustrate this briefly with empirical evidence from three of the initiatives that we studied.

Transformative potential from the ground up: Sustainable innovation journeys, soft change and alignment of interests in urban food initiatives

On Processing Potato 2. Survey of Products, Processes and Operations in Manufacturing

Summary: In supermarkets in the Netherlands, there are over 150 potato products displayed. These products can be distinguished based on various characteristics such as heating method, appearance, dehydration, and storage temperature. Fancier products require more processes and operations in factories and are more expensive. Consumers value low prices and a wide range of products, tastes, and sizes, while processors prioritize other attributes. The different operations in factories include dehydration, heating, cooling, and transformation. Heatmapping and hierarchical clustering were used to analyze the products and their attributes. In total, there are 66 operations involved in the processing of potatoes. Potato processing is different from wheat processing due to the larger range of operations and storage conditions.

Overcoming divergence: managing expectations from organisers and members in community supported agriculture in Switzerland

Summary: Community Supported Agriculture (CSA) is a producer-consumer union that aims to transform agriculture towards social justice, fairness, and participation. However, CSAs often struggle to generate sufficient income for fair wages, which challenges their long-term existence. This study explores the challenges faced by eight CSAs in Switzerland and their strategies to address them. The results highlight the importance of member feedback and involvement in overcoming expectations gaps and increasing social capital.

Through analyzing data and research from 11 European regions, the study identifies aspects of territorial development consistent with features of a wellbeing economy. Discussions also touch on development dynamics, tensions between different goals and resource uses, and conditions for more mutually beneficial rural-urban relationships.
