Culled banana resistant starch-soy protein isolate conjugate based emulsion enriched with astaxanthin to enhance its stability

The conjugates of biomacromolecules such as proteins and polysaccharides have potential to stabilize the emulsion system and encapsulate valuable bioactive compounds for biofortification in food systems. In this study, native banana starch (NBS) was isolated from green culled banana and modified into resistant starch (type III) by lintnerization followed by autoclaving-cooling process, resulting in lintnerized-autoclaved banana starch (LABS). Soy protein isolate (SPI) was used for developing the polysaccharide-protein conjugates Le. LABS-SPI conjugate and used as wall material to stabilize the oil-in-water emulsion system. LABS-SPI conjugate emulsions were subjected to in vitro digestion model and oxidative stability evaluation. Furthermore, the emulsion system was enriched with astaxanthin and evaluated for its stability. The chemical finger printing of LABS-SPI conjugates showed stretching in immine and enaminol group of Schiffs bases, the C-N stretching of Amadori product. During in vitro digestion LABS-SPI conjugate emulsion showed that the presence of resistant starch had an influence on the droplet digestion process and significantly (p < 0.05) lower free fatty acid release compared to emulsions stabilized by SPI alone. LABS-SPI conjugate emulsion system demonstrated higher stability of astaxanthin at storage temperatures (6, 20 and 37 degrees C), and can be used for biofortification of food and pharmaceutical formulations. Glycation of soy protein isolate with maltodextrin through Maillard reaction via dry and wet treatments and compare their techno-functional properties

Summary: Protein-polysaccharide Maillard conjugate has been attracting much attention for its improvement in protein functionality. This study investigated the conjugation of soy protein isolate (SPI) and maltodextrin (MD) using the Maillard reaction under different conditions (dry heating and wet heating) and evaluated its effects on degree of graft, functionalities, and structure. The results showed that dry heating greatly improved emulsifying properties, while wet heating significantly enhanced protein solubility and foaming properties. To obtain a conjugate with better functionality, appropriate Maillard reaction conditions need to be determined.

Summary: Lipophilic bioactive compounds (LBC) in food can be easily degraded by environmental stimuli during processing, storage, and gastrointestinal passage. The poor digestibility and oral bioavailability of these LBC can be improved by colloid-based delivery systems. This review article focuses on recent studies on the development of biopolymeric emulsions as delivery vehicles for encapsulation, protection, and enhancement of bioaccessibility and bioavailability of LBC, with a highlight on the use of proteins, polysaccharides, and their conjugates as emulsifiers to develop stable emulsions.

Probiotic Characterization of Enterococcus spp. Isolated from Raw Goat Milk

Summary: The aim of this research was to determine the probiotic potential and safety of lactic acid bacteria (LAB) isolated from raw goat milk. The LAB isolates showed antimicrobial activity against foodborne pathogens and high survival rate in harsh conditions. Three LAB isolates with high antimicrobial activity and probiotic characteristics were identified as Enterococcus faecium strains. These strains exhibited milk coagulation potential and can be used as starter cultures after further safety evaluation.

Effects of aging and diabetes on the deformation mechanisms and molecular structural characteristics of collagen fibrils under daily activity

An eco-friendly composite hydrogel based on covalently crosslinked cellulose/poly (glycerol citrate) for thallium (І) removal from aqueous solutions

Summary: In this study, a reusable biobased composite hydrogel was successfully synthesized and used for the removal of Tl(I) from aqueous solutions. The hydrogel exhibited high adsorption capacity and thermal stability, and the adsorption process was found to be thermodynamically spontaneous. The results demonstrated that the hydrogel can be reused multiple times without significant loss of its adsorption capacity.

Summary: The potential of multi-layer nanoemulsions for improving the cellular uptake, antioxidant activity, and in vitro bioaccessibility of alpha-tocopherol was examined. The results showed that the multi-layer nanoemulsions significantly enhanced the cellular uptake and antioxidant activity of alpha-tocopherol compared to free coumarin 6. Furthermore, the use of chitosan and dextran sulfate as wall materials in the multi-layer nanoemulsions led to even higher cellular uptake, in vitro bioaccessibility, and antioxidant activity of alpha-tocopherol.

Stabilization of oil-in-water high internal phase emulsions with octenyl succinic acid starch and beeswax oleogel
