Summary: In this study, gliadin/starch nanocomposites (G/SNPs) with different gliadin/starch ratios were prepared and used to stabilize Pickering emulsion gels (PEGs). The interaction between gliadin and gelatinized starch was confirmed by fluorescence and Fourier transform infrared (FTIR) spectra. The stable PEGs stabilized by G/SNPs showed promising potential as carriers for the delivery of hydrophobic bioactive compounds.

Summary: This study developed a stable emulsion form of alpha-linolenic acid (ALA) supplement using ALA-rich diacylglycerol (ALA-DAG) and ALA-DAG stearin (DAG-SF) as a new source of ALA and emulsifier. The emulsions showed high emulsion stability and good potential in improving ALA nutritional status. The emulsion system had tunable texture and high oxidation stability, making it useful for a wide range of food products.

Summary: Reducing fat content in food while maintaining sensory qualities is a challenge for the food industry. This study explores the feasibility of using debranched and OSA esterified resistant starch as an emulsifier to protect fat droplets against enzymatic digestion. The modified starch showed increased resistant starch content but decreased degree of substitution. The resulting emulsifier had weaker emulsifying capacity and reduced stability under certain conditions, but it provides insights into the utilization of resistant starch emulsifiers in reduced fat food formulations.

Summary: This study investigated the lipid digestion of starch-based Pickering emulsions stabilized by starch particles with different oil phases. The results showed that coconut oil had the highest rate of lipid digestion, while increasing starch concentration had positive effects on lipid digestion and increasing oil fraction had negative impacts. Starch-based Pickering emulsion exhibited super stability against oral and gastric digestion, making it a superior delivery system for lipophilic active substances.

The microwave method was used to complex six different fatty acids with debranched millet starch. The complex with linoleic acid showed the highest resistant starch content and exhibited changes in structure and physicochemical properties. The complex inhibited alpha-glucosidase and alpha-amylase activity, and had a low glycemic index, making it suitable for consumption by individuals with type II diabetes.

Summary: This study demonstrated that the AST-loaded Pickering emulsion stabilized by a combination of zein and Adzuki bean seed coat polyphenol had improved stability against high ionic strength and temperature treatments, with a high remaining ratio of AST after UV light exposure. The in vitro digestion process led to changes in droplet size, zeta potential, and microstructure of the emulsion, resulting in high bioaccessibility of AST. These findings suggest that this system may be effective for delivering AST and other hydrophobic bioactive compounds, contributing to the development of novel functional foods.

This suggests that high concentrations of NFC are beneficial for delivering functional foods with satiety effects.

Summary: This study investigated the properties of starch extracted from pineapple stem agricultural waste and compared them with commercial cassava, corn, and rice starches. Pineapple stem starch had the highest amylose content and exhibited unique physicochemical and rheological properties. It also had the highest slowly digestible and resistant starch contents, as well as superior emulsifying properties. Therefore, pineapple stem starch shows promise as a nutritional source and emulsion stabilizer for food applications.

Summary: In this study, astaxanthin-loaded Pickering emulsions were successfully prepared using cellulose nanofibers from Undaria pinnatifida. The cellulose nanofibers had a high aspect ratio and dispersibility, effectively preventing droplet aggregation. Stable emulsions were obtained through optimization and showed good stability at high temperature and long-term storage. In vitro digestion simulation demonstrated that the emulsions released more free fatty acids and had higher bioaccessibility of astaxanthin compared to sunflower oil.

Summary: Pickering emulsions stabilized by biopolymers have gained attention due to their superior quality. In this study, chitosan/guar gum nanoparticles were formed through hydrogen bonding interactions. The pH value was found to regulate the surface charge and aggregation degree of the nanoparticles, resulting in optimized physical stability of the emulsions. Compared to Tween 80-stabilized emulsions, CS/GG-stabilized Pickering emulsions exhibited better lipid oxidation stability and higher retention rate of astaxanthin. This study provides a framework for utilizing polysaccharide particles in functional foods.

Summary: Protein-polysaccharide Maillard conjugate has been attracting much attention for its improvement in protein functionality. This study investigated the conjugation of soy protein isolate (SPI) and maltodextrin (MD) using the Maillard reaction under different conditions (dry heating and wet heating) and evaluated its effects on degree of graft, functionalities, and structure. The results showed that dry heating greatly improved emulsifying properties, while wet heating significantly enhanced protein solubility and foaming properties. To obtain a conjugate with better functionality, appropriate Maillard reaction conditions need to be determined.

Summary: The aim of this research was to determine the probiotic potential and safety of lactic acid bacteria (LAB) isolated from raw goat milk. The LAB isolates showed antimicrobial activity against foodborne pathogens and high survival rate in harsh conditions. Three LAB isolates with high antimicrobial activity and probiotic characteristics were identified as Enterococcus faecium strains. These strains exhibited milk coagulation potential and can be used as starter cultures after further safety evaluation.

Summary: In this study, a reusable biobased composite hydrogel was successfully synthesized and used for the removal of Tl(I) from aqueous solutions. The hydrogel exhibited high adsorption capacity and thermal stability, and the adsorption process was found to be thermodynamically spontaneous. The results demonstrated that the hydrogel can be reused multiple times without significant loss of its adsorption capacity.

Summary: The potential of multi-layer nanoemulsions for improving the cellular uptake, antioxidant activity, and in vitro bioaccessibility of alpha-tocopherol was examined. The results showed that the multi-layer nanoemulsions significantly enhanced the cellular uptake and antioxidant activity of alpha-tocopherol compared to free coumarin 6. Furthermore, the use of chitosan and dextran sulfate as wall materials in the multi-layer nanoemulsions led to even higher cellular uptake, in vitro bioaccessibility, and antioxidant activity of alpha-tocopherol.
