Influence of the in vivo addition of alpha-tocopheryl acetate with three lipid sources on the lipid oxidation and fatty acid composition of Beluga sturgeon, Huso huso, during frozen storage

This study was conducted to investigate the effect of dietary alpha-tocopheryl acetate (vitamin E) and oil sources on fish flesh quality characteristics of Huso huso during frozen storage. Practical-type diets containing 0 or 250 mg vitamin E kg(-1) with three lipid sources, fish oil (FO), soybean oil (SO) and canola oil (CO), were fed to H. huso for 120 days. Fillet samples were analysed fresh or after storage at -18 +/- 1 degrees C for 12 months. Replacement of FO by SO and CO in diets for H. huso significantly altered the fatty acid (FA) profile, which also influenced the FA composition during frozen storage. Dietary vitamin E had a significant effect on muscle vitamin E content and lipid oxidation during storage (P > 0.05). Oxidation was reduced for fish fed vitamin E and results showed that dietary vitamin E supplementation can slow down the level of lipid oxidation in H. huso muscles during frozen storage. Summary: This study investigated the effects of using different methods of probiotics Bacillus subtilis and Bacillus licheniformis in soya bean-based diets on the physiology of beluga (Huso huso). Feeding fish with the 70%SBM-SPRAY2 diet improved fish growth and health, as evidenced by higher blood performance values and lower levels of total protein and RBC in fish fed with 70%SBM compared to other treatments. Additionally, fish fed with dietary probiotics showed significantly higher levels of lysozyme, alternative complement activity, and total viable counts.

Summary: This study investigated the effects of dietary acetic acid, probiotic protexin, and their combination on growth performance, intestinal microbiota, digestive enzymes, immune responses, and fatty acids composition in Siberian sturgeon. Fish fed with a combination of 2% acetic acid and 0.01% protexin showed the highest final body weight, weight gain, and specific growth rate. The results suggest that incorporating acetic acid in the diet, either alone or supplemented with protexin, could be effective as functional feed additives in Siberian sturgeon.

Sous-vide processing of silver carp: Effect of processing temperature and cold storage duration on the microbial quality of the product as well as modeling by artificial neural networks

Summary: Silver carp was processed at different temperatures using the sous-vide method, and the microbial quality of the processed samples was monitored during cold storage. The presence of Enterobacteriaceae, Pseudomonas, Psychrotrophs, and LAB in the samples was analyzed. The results showed that at 75 degrees C, the presence of Enterobacteriaceae, Pseudomonas, and Psychrotrophs were undetectable up to 15 days of storage, and LAB were undetectable even at the end of the storage period.

Physicochemical and Biochemical Properties of Trypsin-like Enzyme from Two Sturgeon Species

The digestion fates of lipids with different unsaturated levels in people with different age groups

Summary: This study investigates the variations in lipid digestion profiles among individuals of different ages using in vitro digestion models. The findings suggest that adults have a more comprehensive lipid digestion compared to infants, and infants tend to release shorter chain length and more saturated free fatty acids during digestion. Additionally, the particle sizes in the stomach of the elderly were consistently larger. This study enhances our understanding of how lipids with different degrees of unsaturation undergo digestion in diverse age groups.

Fabrication and characterization of chitosan-pectin emulsion-filled hydrogel prepared by cold-set gelation to improve bioaccessibility of lipophilic bioactive compounds

Summary: Chitosan-pectin emulsion-filled hydrogel (EFH) was developed to enhance the bioaccessibility of lipophilic bioactive compounds through intestinal delivery. The EFH, prepared without crosslinking agents, demonstrated improved mechanical strength and compactness with higher pectin concentration. It retained the emulsion at pH 2.0 and released it at pH 7.4, resulting in enhanced release of free fatty acids and improved bioaccessibility of curcumin.

Exploration of digestion-resistant immunodominant epitopes in shrimp (Penaeus vannamei) allergens

Mechanism of aroma enhancement methods in accelerating Congou black tea acidification subjected to room temperature storage

Summary: This study investigated the acidification of aroma-enhanced black tea during storage. Analysis of non-volatile substances and organic acids using UPLC-Q-TOF/MS and HPLC revealed a decrease in soluble sugars and amino acids, while an increase in organic acids such as oxalic acid, malic acid, and quinic acid. In vitro experiments further demonstrated that the acidification is a result of the decomposition of sugars and amino acids by heating, as well as the oxidation of aromatic aldehydes. Additionally, the study showed that the taste composition of tea infusion is altered, with reduced amino acids, catechins, soluble sugars, and flavonoids. This research provides a theoretical basis for improving the quality of black tea.

Immobilizing amyloglucosidase on inorganic hybrid nanoflowers to prepare time-temperature integrators for chilled pork quality monitoring
