Shrimp shell wastes: Optimization of peptide hydrolysis and peptide inhibition of alpha-amylase

Response surface methodology coupled with a Box-Behnken design (RSM-BBD) was used to optimize neutrase concentration (A: 4-6% (w/w)), liquid-solid ratio (B: 10-20 mL/g) and hydrolysis time (C: 3-5 h) to obtain shrimp shell wastes hydrolysates with a-amylase inhibitory activity. The optimum conditions were enzyme concentration of 5.4% (w/w), liquid-solid ratio of 13 mL/g, time of 4.1 h, temperature of 50 degrees C and pH of 7.0. Under these conditions, the alpha-amylase inhibitory rate was 43.4%, in agreement with the prediction model with a coefficient of determination (R-2) of 0.9676. Shrimp shell wastes hydrolysates showed significant ability to scavenge diphenyl picryl hydrazinyl free radicals, reduce iron (III) and inhibit lipid peroxidation. Shrimp shell waste hydrolysates consisted mainly of small peptides with molecular weights less than 4 kDa and high essential amino acids (278 mg/g), which indicated its high nutritional value based on the FAO/WHO recommended standard protein. The results showed that shrimp shell waste hydrolysates contained valuable components that could be converted into useful and potentially high-value products.

Characterization of Volatile Compounds by HS-GC-IMS and Chemical Composition Analysis of Colored Highland Barley Roasted at Different Temperatures

Summary: This study analyzed the volatile fingerprints of colored highland barley (CHB) roasted at different temperatures using E-nose and HS-GC-IMS. The results showed that roasting changed the volatile smells, color, and composition of CHB. Pyrazines were identified as the markers for roasted CHB (RCHB). The volatiles could easily distinguish between raw CHB and RCHB, but not between CHB roasted at different temperatures. Roasting also caused changes in color characteristics and CHB constituents, with variations depending on the cultivar.

Lonicera japonica polysaccharides improve longevity and fitness of Caenorhabditis elegans by activating DAF-16

Summary: This study investigated the anti-aging activities of Lonicera japonica polysaccharides (LJPs) and revealed their mechanism of action. LJPs were found to prolong the lifespan of Caenorhabditis elegans, improve its fitness, reduce lipofuscin accumulation, and activate stress-related genes and antioxidant system. These effects were mediated by the DAF-16 pathway.

Physicochemical Characterizations, Digestibility, and Lipolysis Inhibitory Effects of Highland Barley Resistant Starches Prepared by Physical and Enzymatic Methods

Summary: This study investigated the physicochemical and structural characteristics, digestibility, and lipolysis inhibitory potential of highland barley resistant starches (HBRSs) prepared by different modifications. The results showed that the resistant starch content of native starch significantly increased after modifications. HBSP displayed the highest crystallinity, while HBSA and HBSM had a high degree of the amorphous region. HBSP exhibited the lowest digestibility and HBSM showed the highest inhibitory activity on lipolysis. These findings provide insights into the development of functional food from highland barley native starch.

Brewing characteristics, physicochemical constituents, and antioxidant activity of the infusions of colored highland barley roasted at different times

Summary: This study aimed to investigate the brewing characteristics, physicochemical components, and antioxidant activities of colored highland barley (CHB) roasted at different times. The results showed that the CHB roasted at 6.0 min had higher releases of beta-glucan but lower antioxidant activities, while CHB roasted at 9.0 min and 12.0 min had better leaching of total sugar, protein, polyphenols, flavonoids, and free amino acids, and higher antioxidant activities. These findings suggest that the roasted CHB infusions have potential as candidates for cereal beverages and functional foods.

Physical and enzymatic modifications of starch from blue highland barley and their characterizations, digestibility, and lipolysis inhibitory activities

Summary: The aim of this study was to investigate the differences in physicochemical characteristics, digestibility, and lipolysis inhibitory potential of blue highland barley resistant starches (BHRSs) produced by different modifications. Results showed that the amount of resistant starch in native starch increased significantly after modifications, with some variations among the BHRSs. BHSA and BHSM had higher swelling powers and water-binding capabilities, lower amylose contents and solubilities compared to BHSI and BHSP. BHSP demonstrated the highest degree of crystallinity and crystalline region while BHSA and BHSM had a substantial proportion of the amorphous region. BHSA and BHSM showed the strongest inhibitory activities on lipolysis, while BHSP had the lowest digestibility. This study provided insights for developing modified native starch from blue highland barley as a functional food.

Cross-linked modifications of starches from colored highland barley and their characterizations, digestibility, and lipolysis inhibitory abilities in vitro

Summary: In this study, cross-linked modifications were used to promote the stability and functionality of native starch from colored highland barley. The physicochemical characteristics, digestibility, and lipolysis inhibitory potential of the cross-linked starches were assessed. The results showed that citric acid modification resulted in higher solubility, swelling power, and water-binding capacity, while STMP/STPP modification led to higher crystalline patterns. Moreover, the effects of cross-linking modifications on the functionality of starches varied among different cultivars.
