BACKGROUND: Wood vinegar (WV), a byproduct from the charcoal production process, has been reported to have excellent antioxidant capability by chemical examination. However, the biological effect of WV in living animals is still unknown. In this study, a simple model organism, the nematode Caenorhabditis elegans, was used as an in vivo system to assess the biological effects of wood vinegar through the development, lifespan, brood size, germline cell apoptosis and superoxide dismutase (SOD) level. RESULTS: Wood vinegar extract (WVE) promoted the development, prolonged the lifespan and increased the brood size in reactive oxidative species (ROS)-sensitive mutant worms. WVE treatment rescued the effects of damage in germline cell apoptosis and SOD upregulation induced by paraquat, an ROS generator, to the control level. Additionally, WVE showed comparative ability in rescuing damage as compared with L-ascorbic acid and a-tocopherol. CONCLUSION: WVE treatment exhibits a remedial/beneficial effect on ROS-sensitive mutant under normal cultural conditions and on wild-type worms under oxidative stress. ROS scavenging is involved in the damage-rescuing mechanism. This study will provide a basal biological and nutritional exploration for the use of WV as a functional food, and for the substitution of chemical antioxidants with side effects in food. Myofibrillar Protein Interacting with Trehalose Elevated the Quality of Frozen Meat

Shijie Xu, Ping Li, Fei Han, Hui Zhou, Kai Zhou, Ying Wang, Kezhou Cai, Cong Li, Baocai Xu

Summary: This study investigated the interactions between trehalose/chitooligosaccharide (COS) and myofibrillar protein (MP), and their effects on the quality of frozen meat. The results showed that trehalose and COS enhanced the content of hydrogen bonds in MP and exposed its hydrophobic residues. Both trehalose and COS significantly reduced thawing loss of frozen meat, with trehalose performing better in terms of smell, texture, and overall acceptance. These findings suggest that the interaction between trehalose/COS and MP can provide technical guidance for quality control of frozen meat.

Summary: This study investigated the effects of additives on cooking fumes emissions during meat grilling. The results showed that the application of white pepper, salt, garlic powder, and mixed spices can significantly reduce particle emissions and total concentration of volatile organic compounds. However, grilling meat marinated with compound additives resulted in increased emissions of volatile organic compounds.

Isolation and Identification of Antioxidative Peptide from Goose Liver Hydrolysate to Ameliorate Alcohol-Mediated Oxidative Stress Damage in HHL-5 Hepatocytes

Yeye Du, Zhihong Chen, Haiyang Wei, Shuangjie Zhu, Kezhou Cai

Summary: The aim of this study was to isolate and identify antioxidative peptide from goose liver hydrolysate for ameliorating alcohol-induced oxidative stress damage in HHL-5 hepatocytes. The target antioxidative peptide, Leu-Pro-Leu-Pro-Phe-Pro (LPLPFP), derived from NADH-ubiquinone oxidoreductase chain 1 in goose liver, was found to have satisfactory stability and high hepatic protective activity. It prevented oxidative stress damage by inhibiting reactive oxide species (ROS) production through upregulating gene expression in the Ahr-NQO1 signal pathway.

Summary: This study aimed to isolate a oligopeptide with anti-inflammatory activity from goose blood, which can ameliorate LPS-mediated inflammation response and oxidative stress. The results showed that the oligopeptide had satisfactory stability and could downregulate the TLR4/NF-kB/iNOS pathway to protect against inflammation. Additionally, the oligopeptide activated the antioxidant defense system to improve oxidative stress damage in the inflammatory state.
