The journal European Food Research and Technology publishes state-of-the-art research papers and review articles on fundamental and applied food research. The journal's mission is the fast publication of high quality papers on front-line research, newest techniques and on developing trends in the following sections:

-chemistry and biochemistry-
technology and molecular biotechnology-
nutritional chemistry and toxicology-
analytical and sensory methodologies-
food physics.

Out of the scope of the journal are:
- contributions which are not of international interest or do not have a substantial impact on food sciences,
- submissions which comprise merely data collections, based on the use of routine analytical or bacteriological methods,
- contributions reporting biological or functional effects without profound chemical and/or physical structure characterization of the compound(s) under research.

22-Jul-2022 Submission, 15-Sep-2022 Major revision, 12-Nov-2022 Acceptance. This journal puts manuscripts "under review" as soon as they are submitted, followed by a period of time with the Editor-in-Chief (EIC), and then continues with the "under review" process. The reviewers' comments were very good, and the review process was relatively short. After the major revision, I didn't feel like making any more changes, so it took a long time. Still, I highly recommend this journal, as they accepted it a few days after the revisions were made. I feel that this journal has good prospects, as long as it goes through the review process. Unfortunately, one of my junior colleagues had their manuscript rejected because they didn't submit it. My manuscript number is 1000, and they publish around 300 articles a year, with a one-third chance of acceptance. I hope to have the opportunity to be published in a higher-tier journal in the future.

The review process took about one and a half months. It was first under review for a month, with the Editor-in-Chief (EIC) taking about a week or so. After that, it remained under review for over half a month before receiving the revision request. I took about a month to revise and resubmit, and I returned it in about a week. Soon after, it was accepted for publication. Overall, it was relatively fast.
