Actually, shortly after I sent the email, the status of the paper automatically changed to "required reviews completed." The email from the editor was just a template response. I personally speculate that it has little to do with the email.

If the external review comments are consistent, the manuscript review should be considered completed. Then, it should enter the "decision in process" stage, and it will take another 1 to 2 weeks to obtain the results. However, there may also be cases where the external review comments are inconsistent, which would require additional reviewers and revert back to the "under review" stage. We hope for a positive outcome.

I have never experienced a change in the "under review" date. I guess the change in the "under review" date is because the editor has invited more reviewers to review the manuscript again.
