A pectic polysaccharide, designated as PD, was extracted from fresh plums (Prunus domestica L) with a simulated gastric fluid. Galacturonan, which was partially substituted with methyl and 0-acetyl ester groups, and rhamnogalacturonan were the main constituents of the linear regions of the sugar chains of PD. The ramified region contained mainly 1,4-linked B-o-galactopyranose residues and, to a lesser extent, 1,5-linked a-L-arabinofuranose residues. The separation of PD, by DEAE-cellulose column chromatography, yielded two pectic fractions: PD-1 and PD-2, eluted with 0.1 and 0.2 M NaC1, respectively. Enzymatic digestion of PD with 1,4-a-o-polygalacturonase yielded the fraction PD-E. The parent pectin PD and the PD-1 fraction were found to diminish the adhesion of peritoneal leukocytes at the concentrations of 0.05-1.0 mg/ml. However, the PD-E fraction failed to have an effect on cell adheMon at the concentrations of 0.05-0.1 mg/ml. PD, PD-1 and PD-E were found to inhibit the production of superoxide anion radicals by reducing xanthine oxidase activity by 38%, 97% and 47%, respectively. Therefore, the PD-1 fraction appeared to be an active fragment of pectic macromolecule isolated from fresh plum with a simulated gastric fluid. (C) 2013 Elsevier Ltd. All rights reserved.

Later school start time is associated with better academic performance, sleep-wake rhythm characteristics, and eating behavior

Summary: An early school start time negatively impacts students' sleep, well-being, and academic performance, but its effect on eating disorders is not well understood. Students with a school start time of 9:00 in Russia tend to wake up later, sleep more, experience less social jetlag and sleep loss, and have higher academic performance compared to those starting school at 8:00. Additionally, the frequency of food addiction is found to be lower in students with a later school start time.

Summary: Ion track membranes have potential application as wound dressings, but their possibilities and prospects have not been fully explored. In this study, PET-based ion track membranes were tested and combined with electrospun fibers to create wound dressings with specific functional properties. The combination of ion track PET membranes and electrospun fibers from a mixture of chitosan and collagen can be used to produce wound dressings.

Serosal Adhesion Ex Vivo of Hydrogels Prepared from Apple Pectin Cross-Linked with Fe3+ Ions

Summary: The adhesion of cross-linked low-methyl esterified pectin hydrogel to rat intestinal serosa was investigated. FeP hydrogel showed higher adhesion than hydrogels cross-linked by Ca2+, Zn2+, and Al3+ cations. The concentration of cross-linking cation did not affect the adhesion of the pectin hydrogel. The mechanical properties and surface microrelief of the hydrogel were influenced by the type and concentration of the cross-linking cations. FeP hydrogel demonstrated better stability and mechanical properties in physiological environments, making it a promising bioadhesive for tissue engineering.

Effect of Cross-Linking Cations on In Vitro Biocompatibility of Apple Pectin Gel Beads

Ca-Alginate Hydrogel with Immobilized Callus Cells as a New Delivery System of Grape Seed Extract

Summary: The aim of this study was to obtain alginate hydrogels with immobilized callus cells to investigate the interaction between physicochemical properties, texture, swelling behavior, and grape seed extract (GSE) release. The inclusion of duckweed and campion callus cells in hydrogels resulted in a decrease in porosity, gel strength, adhesiveness, and thermal stability, and an increase in encapsulation efficiency compared with alginate hydrogel.

Effect of Chitosan on Rheological, Mechanical, and Adhesive Properties of Pectin-Calcium Gel

Summary: Chitosan was incorporated into pectin ionotropic gel to enhance its mechanical and bioadhesive properties. Different chitosan weight fractions were used to prepare the pectin-chitosan gels, which were characterized by rheological tests, penetration tests, and serosal adhesion ex vivo assays. The results showed that the addition of chitosan improved the mechanical stability and adhesivity of the pectin gel, with the highest values observed in P-Ch1 gel.

Enrichment of 3D-Printed k-Carrageenan Food Gel with Callus Tissue of Narrow-Leaved Lupin Lupinus angustifolius

Summary: The study aims to develop and evaluate the printability of k-carrageenan inks enriched with lupin callus tissue and examine their effect on the texture and digestibility of 3D-printed gel. Results showed successful 3D printing of enriched ink at specific concentrations of callus. Higher concentrations of callus material reduced the feasibility of 3D printing. The texture and rheological properties of the gel were influenced by the type and concentration of callus used. Incorporating lupin callus into hydrocolloid ink for food 3D printing could lead to the development of gelling material with new properties.

Association between food addiction and time perspective during COVID-19 isolation

The digestion fates of lipids with different unsaturated levels in people with different age groups

Summary: This study investigates the variations in lipid digestion profiles among individuals of different ages using in vitro digestion models. The findings suggest that adults have a more comprehensive lipid digestion compared to infants, and infants tend to release shorter chain length and more saturated free fatty acids during digestion. Additionally, the particle sizes in the stomach of the elderly were consistently larger. This study enhances our understanding of how lipids with different degrees of unsaturation undergo digestion in diverse age groups.

Fabrication and characterization of chitosan-pectin emulsion-filled hydrogel prepared by cold-set gelation to improve bioaccessibility of lipophilic bioactive compounds

Summary: Chitosan-pectin emulsion-filled hydrogel (EFH) was developed to enhance the bioaccessibility of lipophilic bioactive compounds through intestinal delivery. The EFH, prepared without crosslinking agents, demonstrated improved mechanical strength and compactness with higher pectin concentration. It retained the emulsion at pH 2.0 and released it at pH 7.4, resulting in enhanced release of free fatty acids and improved bioaccessibility of curcumin.

Exploration of digestion-resistant immunodominant epitopes in shrimp (Penaeus vannamei) allergens

Mechanism of aroma enhancement methods in accelerating Congou black tea acidification subjected to room temperature storage

Summary: This study investigated the acidification of aroma-enhanced black tea during storage. Analysis of non-volatile substances and organic acids using UPLC-Q-TOF/MS and HPLC revealed a decrease in soluble sugars and amino acids, while an increase in organic acids such as oxalic acid, malic acid, and quinic acid. In vitro experiments further demonstrated that the acidification is a result of the decomposition of sugars and amino acids by heating, as well as the oxidation of aromatic aldehydes. Additionally, the study showed that the taste composition of tea infusion is altered, with reduced amino acids, catechins, soluble sugars, and flavonoids. This research provides a theoretical basis for improving the quality of black tea.

Immobilizing amyloglucosidase on inorganic hybrid nanoflowers to prepare time-temperature integrators for chilled pork quality monitoring
