The modulation of genes in pylorus was related to absorption and metabolism of astaxanthin, while liver showed a potential link to the ferroptosis process. Dietary astaxanthin had a lesser impact on muscle except for genes related to actin remodelling and glucose homeostasis.

Summary: This study examined the differences in surface color and astaxanthin (AST) accumulation between marine and freshwater farming of Atlantic salmon. The results showed that marine farming led to easier color accumulation. Different muscle parts of the fish showed variations in chromaticity and AST content, with the dorsal muscle having the highest values. Optimized extraction conditions resulted in an 80.51% increase in AST concentration. Interestingly, color value was not positively correlated with AST concentration in the same fish. Overall, marine farming had higher AST content than freshwater farming.

Summary: The increasing seawater temperatures in Tasmania during the summer period have led to thermal stress-induced starvation events in farmed Atlantic salmon, resulting in flesh pigment depletion. In this study, the effect of prolonged exposure to elevated water temperature on flesh pigmentation and muscle structural integrity was investigated using histological and transcriptomic analysis. The results showed that muscle degradation and atrophy were observed in fish with low flesh pigmentation, while genes related to metabolism and muscle integrity were differentially expressed in fish with high flesh pigmentation.

Summary: This review focuses on the water holding properties of Atlantic salmon, evaluating the methods used to measure them and how pre- and postmortem factors, processing, and preservation methods influence these properties and their correlations to other quality parameters. Various methods are available to measure water holding capacity (WHC), with the centrifugation method being the most prevalent but other non-invasive and cost-effective approaches increasingly preferred. The diversity of methods makes direct comparison of results from previous research relative unless the same method is used with the same conditions.

Summary: Atlantic salmon with different levels of EPA and DHA in their diets were studied on their fillet concentrations of astaxanthin and its metabolite idoxanthin. The study found that salmon fed higher levels of EPA and/or DHA had higher fillet astaxanthin concentrations and lower metabolic conversion to idoxanthin. DHA had a more positive effect on fillet astaxanthin concentrations compared to EPA, and there were positive correlations between fillet DHA, EPA, sum N-3 fatty acids, and fillet astaxanthin concentration. A negative correlation was found between the concentration of N-6 fatty acids in the fillet and the astaxanthin concentration.

Summary: The hypothesis of this study was that increased growth in spring, stimulated by temperature and daylength, leads to oxidative stress and changes in antioxidant utilization in Atlantic salmon. The study found that vitamin E and vitamin C concentrations decreased in the spring and were restored in the autumn, while astaxanthin concentration remained constant during the spring and summer and increased in the autumn. Cataract and melanin spots were observed during the spring and early summer. However, the concentrations of malondialdehyde and astaxanthin did not support the hypothesis, and more data is needed to draw conclusions on the effects of oxidative stress on melanin spots.

Summary: This study confirms the effects of partially or fully replacing fish oil (FO) with microalgal oil (AO) on growth, muscle fatty acid profiles, and muscle quality of farmed Atlantic salmon, contributing to the sustainable growth of aquaculture. EPA and DHA digestibility was greater than 96% when the lipid source in the diet was changed. Sensory characteristics of raw fish fillets were similar among treatments, indicating no impact on consumers. Overall, the results suggest that the tested AO enables sustainable growth of Atlantic salmon aquaculture by maintaining EPA and DHA levels in fish fillets while reducing the marine footprint of aquafeeds.

Summary: Dietary polyphenols improve gut health through direct effects on the host's intestinal barrier, antioxidant and immune systems, as well as through the action of metabolites produced by the microbiota. Specific polyphenols like gallic acid, curcumin, resveratrol, quercetin, daidzein, and anthocyanins have been found to prevent or treat intestinal inflammation and brain disorders by chelating metals and scavenging free radicals. However, only a small fraction of polyphenol catabolites are bioavailable, with the majority being metabolized by the gut microbiota.

Summary: This study investigated the combined effects of partial dietary replacement of fish oil (FO) by vegetable oil (VO) and reduced ambient salinity on the fatty acid composition of C. labrosus juveniles. The results showed that C. labrosus is able to biosynthesise EPA and DHA from ALA, and low salinity conditions can upregulate the gene expression related to fatty acid metabolism. Fish reared on FO20 diet showed the highest amount of n-3 LC-PUFA in muscle.

Summary: Metal pollution has significant effects on aquatic environments, and metallothioneins play important roles in maintaining metal homeostasis and detoxification. This study identified two metallothionein-coding transcripts in Gammarus fossarum and investigated their organ-specific expression patterns. The results showed that mt1 was more strongly induced after cadmium exposure, and mt1 was more highly induced in the caeca compared to the gills for any metal exposure. Additionally, mt2 was more inducible in the gills than in the caeca for cadmium and zinc exposure at the individual level.

The SIRT1-NRF2-TFEB pathway is proposed to mediate lipophagy activation, and lipophagy helps alleviate high glucose-induced lipid deposition. This study provides insights into the control of lipophagy in response to metabolic stress.
