Citrus genus is characterized by a specific presence of indole metabolites deriving from the N-methylation of tryptamine and its hydroxylated form, 5-hydroxytryptamine (serotonin), which are likely involved in plant defense mechanisms. In this study, we identified for the first time the occurrence in Citrus plants of serotonin 5-O-beta-glucoside and all its N-methylated derivatives, that is, N-methylserotonin 5-O-beta-glucoside, N,N-dimethylserotonin (bufotenine) 5-O-beta-glucoside, and N,N,N-trimethylserotonin (bufotenidine) 5-O-beta-glucoside. The identification of the glucosylated compounds was based on mass spectrometric studies, hydrolysis by glucosidase, and in some cases, comparison to authentic compounds. Beside leaves, the distribution of the glucosylated forms and their aglycones in some Citrus species was evaluated in flavedo, albedo, juice, and seeds. The simultaneous presence of serotonin and its N-methylated derivatives, together with the corresponding glucosylated forms, is consistent with the occurrence of a metabolic pathway, specific for Citrus, aimed at potentiating the defensive response to biotic stress through the optimization of the production and use of the most toxic of such metabolites.

Evaluating the influence of operational parameters of pulsed light on wine related yeasts: focus on inter- and intra-specific variability sensitivity

Jules Harrouard, Etienne Pilard, Cecile Miot-Sertier, Lena Pouget, Philippe Marullo, Giovanna Ferrari, Gianpiero Pataro, Warren Albertin

Summary: This study investigates the efficiency of pulsed light (PL) treatment for managing microorganisms in wine, particularly focusing on the sensitivity of Brettanomyces bruxellensis strains. The results show that PL treatment can effectively reduce the number of different B. bruxellensis strains in wine, highlighting its potential for wine microbial stabilization.

A Comprehensive Overview of Tomato Processing By-Product Valorization by Conventional Methods versus Emerging Technologies

Elham Eslami, Serena Carpentieri, Gianpiero Pataro, Giovanna Ferrari

Summary: The tomato processing industry generates a significant amount of residue, causing disposal issues and environmental burdens. Previous studies have shown that tomato by-products contain valuable compounds that can be utilized in various industries. Conventional solvent extraction, although widely used, has drawbacks such as solvent usage and biomass utilization. Recent advances in extraction techniques, including the use of green technologies, have greatly improved the recovery of these compounds.

Summary: The inclusion of former food products in the diet of buffaloes as an alternative to green forage did not significantly affect fermentation characteristics, milk yield and quality, and the content of certain biomolecules and total antioxidant activity. Therefore, biscuit meal can be used as a substitute for green fodder to ensure environmental sustainability and optimize costs without compromising milk quality.

Pulsed electric fields-assisted extraction of valuable compounds from red grape pomace: Process optimization using response surface methodology

Serena Carpentieri, Giovanna Ferrari, Gianpiero Pataro

Summary: This study optimized the pulsed electric fields (PEF)-assisted extraction process to enhance the extraction yields of bioactive compounds from red grape pomace. Results showed that under the optimal processing conditions (electric field strength of 4.6 kV/cm, energy input of 20 kJ/kg), PEF significantly improved the permeability of grape pomace cell membrane, resulting in increased extraction yields of total phenolic content, flavonoid content, total anthocyanin content, tannin content, and antioxidant activity.

Summary: This study evaluated the expression of SGLT2, inflammatory cytokines, and sirtuins in breast fat tissue and serum cytokines of pre-menopausal women. The results showed that women with fatty breasts over-expressed SGLT2 and inflammatory cytokines, while downregulating breast sirtuins. The study also found correlations between the expression of SGLT2/cytokines/sirtuins and clinical variables related to cardiovascular health.

MiR-148a-3p Promotes Colorectal Cancer Cell Ferroptosis by Targeting SLC7A11

Elisa Martino, Anna Balestrieri, Francesca Aragona, Giovanna Bifulco, Luigi Mele, Giuseppe Campanile, Maria Luisa Balestrieri, Nunzia D'Onofrio

Summary: This study reports the antineoplastic effect of miR-148a-3p overexpression in a colorectal cancer (CRC) model, which occurs through apoptosis, mitochondrial impairment, lipid peroxidation, and ferroptosis sustained by the ACSL4/TFRC/Ferritin axis. The downregulation of SLC7A11 by miR-148a-3p may contribute to the cytotoxicity. These findings highlight the oncosuppressor role of miR-148a-3p and its potential as a diagnostic and therapeutic biomarker in CRC.

Effects of the Amylose/Amylopectin Content and Storage Conditions on Corn Starch Hydrogels Produced by High-Pressure Processing (HPP)

Oscar Pulgarin, Dominique Larrea-Wachtendorff, Giovanna Ferrari

Summary: This study examines the effects of amylose/amylopectin content on the gelation of starch and the physical properties of hydrogels produced by HPP. The study also evaluates the impact of storage temperature and packaging type on the stability of hydrogels during a 30-day storage period. The results show that amylose has an antagonistic role in water absorption and gel formation, as well as the physical stability of hydrogels. A minimum amylose concentration of 20% is needed to form stable corn starch HPP hydrogels. Storage at a temperature of 20 degrees C and the use of polymeric bags are recommended for long-term storage of corn starch hydrogels.
