Summary: This review summarizes the role of omega-3 and omega-6 fatty acids, determined by chain length, saturation degree, and position of double bonds, in human health. It highlights oleaginous microalgae as a reliable, economical, and sustainable source of these fatty acids. Humans cannot synthesize these fatty acids and need to absorb them through the diet. The demand for microbial omega-3 fatty acids is increasing due to the growing prevalence of cardiovascular diseases and changing dietary preferences. The importance of a healthy immune system, especially following the COVID-19 pandemic, has further strengthened the market for omega-3 fatty acids.

Summary: The balance between omega-3, omega-6, and omega-9 fatty acids is crucial for the formation of cell membranes and various biological processes. Dietary administration of these fatty acids can improve the quality of poultry and animal meat. Omega-3 and omega-6 fatty acids have anti-inflammatory effects and can improve oxidative properties and immunity. High levels of omega-6 fatty acids are linked to disorders such as depression and heart disease, while omega-3 fatty acids have positive impacts on cholesterol levels and reduce the occurrence of coronary heart disease.

Summary: Food waste is a significant issue with ecological, economic, and social consequences. However, there is a lack of understanding regarding how to motivate consumers to avoid food waste. This paper addresses this gap by developing a 21-item Motivation to Avoid Food Waste (MAFW) scale, which includes four motivations: environmental, moral, financial, and social. Three studies demonstrate the scale's reliability and validity.

Summary: This study analyzed the levels of 3-MCPD and 1,3-DCP in 45 edible vegetable oil samples from the Iran market. The results showed significant differences in the average concentrations of 3-MCPD and 1,3-DCP among different types of vegetable oils, but no significant differences among different brands. Sesame and corn oils had the highest and lowest average concentrations of 3-MCPD and 1,3-DCP, respectively. The calculated Hazard Index values indicated no major risk to Iranian consumers. However, it is necessary to understand the processes leading to the formation of these contaminants, develop real-time monitoring methods, and mitigate the occurrence of such chemicals while ensuring food safety and sensory properties.

Summary: This study identified a potential gene, Glyma.05g221500 (HD), on chromosome 5 of soybean that controls elevated ALA concentration. The gene, a homeodomain-like transcriptional regulator, may regulate the expression level of microsomal omega-3 fatty acid desaturase genes to reduce the omega-6/omega-3 ratio in seeds. The combination of mutant alleles HD and FAD2-1 was found to be sufficient to lower the omega-6/omega-3 ratio in populations where these genes were segregated.

Summary: This study explored the connections between diet quality, satisfaction with food-related life, and life satisfaction in mother-adolescent dyads. The findings showed that diet quality was linked to satisfaction with food-related life, which in turn influenced the life satisfaction of both mothers and adolescents. However, no direct relationship was found between diet quality and life satisfaction for either member of the dyad. The study also revealed that the adolescents' diet quality had a negative impact on their mothers' satisfaction with food-related life, while the adolescents' satisfaction with food-related life was positively associated with their mothers' life satisfaction. The mothers' satisfaction with food-related life played a mediating role between their own diet quality and life satisfaction. This suggests that mothers and their adolescent children influence each other's dietary patterns and life satisfaction. Moreover, the study highlighted the importance of interventions targeting both mothers and their adolescent children to promote healthy eating habits.

Summary: Overeating associated with neurogenic obesity after spinal cord injury (SCI) may be related to how persons with SCI experience satiation, their eating frequency, and the context in which they eat their meals. Those with SCI rely less on physiological satiation cues for meal termination and instead rely more on hedonic cues. There are differences in meal contexts and eating frequency between SCI individuals and controls, with SCI individuals consuming fewer meals but having a higher overall eating frequency due to increased snacking. These factors likely contribute to overeating associated with neurogenic obesity after SCI.

The study found that higher impulsivity and reward-seeking behaviors were related to greater fat and sugar intake in males, while higher negative urgency and BMI were related to greater intake in both sexes. These findings suggest that individuals with certain traits may be more at risk for weight gain due to overconsumption of unhealthy foods.

Summary: This study aimed to investigate the association between sensory reactivity and feeding problems in young children. The results showed that taste/smell sensitivity was significantly associated with difficulties in texture transition/introduction, limited variety of foods, and both feeding problems. Additionally, children with total sensory reactivity or auditory filtering sensory reactivity had a higher prevalence of consuming a limited variety of foods. These findings highlight the importance of considering sensory reactivity as a potential predictor of feeding problems.
