Constraints and potentials for the nutritional modulation of the fatty acid composition of ruminant meat

The meat from ruminants can be a valuable dietary source of rumenic acid (c9,t11-CLA) and of n-3 long chain polyunsaturated fatty acids (n-3 LC-PUFA). Nevertheless, commonly ruminant meats present a fairly low content of both c9,t11-CLA and n-3 LC-PUFA. Most of c9,t11-CLA in meat is derived from the delta-9 desaturation of t11-18:1 catalyzed by stearoyl-CoA desaturase (SCD) and deposited in triacylglycerides (TAG). Thus, optimizing c9,t11-CLA in meat implies: a high substrate supply, a high SCD activity, and a high intramuscular fat (IMF) deposition. High rumen t11-18:1 outflow requires high forage diets which down-regulate SCD activity and IMF deposition. Conversely, as most animals are finished with cereal rich concentrate diets, the SCD activity and IMF deposition are promoted but the rumen outflow of t11-18:1 frequently is replaced by t10-18:1 (t10-shift) which cannot be converted to CLA. Thus the occurrence of the rumen t10-shift is probably the main constraint to c9,t11-CLA enrichment in meat, as is reviewed in detail. The constrains to n-3 LC-PUFA enrichment of ruminant meat are mostly associated to the extensive rumen biohydrogenation of PUFA, the low elongation and desaturation of 18:3n-3 into n-3 LC-PUFA, and the capacity of muscle lipids to incorporate n-3 LC-PUFA. Considering the almost exclusive esterification of n-3 LC-PUFA in membrane phospholipids, the limits to n-3 LC-PUFA incorporation in muscle are discussed considering the amount of and type of available phospholipids as well as the possibility of its esterification in TAG. Simplified summary of the main drives that could limit the c9,t11-CLA deposition in meat of ruminants fed high forage or high concentrate diets.

Production of low-cholesterol butter with Lacticaseibacillus paracasei immobilized in calcium-alginate beads

Summary: This study investigated the use of three strains of Lacticaseibacillus paracasei to reduce cholesterol in cream and butter. The lactobacilli cultures were immobilized in calcium-alginate beads and showed a significant reduction in cholesterol content in cream. The butter produced from the fermented cream had a substantial reduction in cholesterol, as well as improvements in fatty acid profile and atherogenicity and thrombogenicity indices. Sensory evaluation also indicated positive results for the low-cholesterol butter.

Pulsed Light Application for Campylobacter Control on Poultry Meat and Its Effect on Colour and Volatile Profile

Summary: The application of pulsed light technology on poultry meat can effectively reduce the number of Enterobacteriaceae bacteria and change the color of treated poultry meat. Pulsed light treatment can also decrease the proportion of aldehydes in meat, particularly those associated with chicken-like, chicken skin-like, and sweet odors. Further studies are needed to explore the reduction of Campylobacter with higher energy doses of pulsed light and the impact of volatile compounds on the flavor of treated meat samples during storage.

Fatty Acid Composition of M. Biceps Femoris of Edible Dormouse (Glis glis L.)

Summary: The fatty acid composition of edible dormouse muscle was investigated in this study. More than 20 fatty acids were identified, with oleic acid being the most abundant. Monounsaturated fatty acids (MUFA) were the dominant type, followed by saturated fatty acids (SFA) and polyunsaturated fatty acids (PUFA). The sums of PUFA and n-3 PUFA tended to be higher in males. Several long-chain PUFA, including arachidonic acid and docosahexaenoic acid, were detected in dormouse muscle. The study also found that dormice feed on leaf and wood lipids of Coniferophytes. The findings contribute to the understanding of dormouse physiology and nutritional traits.

Forage based diet as an alternative to a high concentrate diet for finishing young bulls-Effects on growth performance, greenhouse gas emissions and meat quality

Summary: This study compared the effects of two diets on the growth performance, carcass and meat quality, fatty acid profile, and carbon footprint of young crossbred-bulls. The results showed that a diet with high forage content and low starch content supplemented with sunflower seeds can be an alternative to conventional diets, although it may slightly reduce animal performance. This alternative diet has a strong impact on reducing dependence on external resources.
