Impact of dietary pattern of the fecal donor on in vitro fermentation properties of whole grains and brans

Because diet influences gut microbiota composition and function, the purpose of this study was to determine how fecal donor diet impacts in vitro fermentation properties of whole grain flours and brans from corn, oats, rye, and wheat. Samples were fermented with fecal microbiota from subjects with similar energy intakes but differing in intakes of several beneficial nutrients (G1 > G2). Shifts in the microbiota during fermentation were a function of diet group and time. Fecal microbiota from G1 subjects showed less decrease in diversity during fermentation and these microbiotas showed higher carbohydrate utilization and butyrate production compared with microbiota from G2 subjects. More carbohydrates were fermented from whole grains than brans. Rye induced high carbohydrate fermentability and butyrate production accompanied by low ammonia production, but only when using fecal microbiota from G1 subjects. Thus, diet quality influences the ability of the microbiota to ferment carbohydrates, differentiate among grains, and produce butyrate. (C) 2017 Elsevier Ltd. All rights reserved.

Standardization of process protocol for isolation of starch from mango kernel and its characterization

Summary: The study found that the optimal method for isolating starch from mango kernels involved a solid-to-water ratio of 1:3 and centrifugation at a frequency of 3 times, resulting in a starch yield of 48.43% ± 1.08% and purity of 76.46% ± 0.83%. The chemically isolated starch exhibited higher paste clarity and better color attributes compared to the starch obtained through centrifugation. Both starches showed good functional, structural, and thermal properties, making them suitable for various applications in the food and non-food industries.

Summary: Inflammatory bowel disease (IBD) is associated with an altered gut microbiota composition, including expansion of Proteobacteria. Adherent-invasive Escherichia coli (AIEC) strains are enriched in some IBD patients, and AIEC strains show enhanced pathogenicity compared to non-AIEC strains. AIEC strains cause more severe intestinal inflammation and intracellular survival/replication phenotypes positively correlate with disease. This knowledge can be therapeutically exploited to alleviate intestinal inflammation.
