Summary: Chitosan, derived from chitin, has strong antifungal activity and is biodegradable, biocompatible, and non-toxic. Chitosan nanoparticles can enhance its antifungal activity. Various parameters, such as molecular weight, degree of deacetylation, acetylation pattern, concentration, and protonation of chitosan, affect its antifungal activity and nanoparticle properties. Understanding these parameters is important for designing environmentally friendly plant protection strategies.

Summary: This study aimed to investigate the impact of chitosan's molecular weight and degree of deacetylation on the bioaccessibility of quercetin encapsulated in alginate/chitosan-coated zein nanoparticles. The chitosan coating layer resulted in nanoparticulate systems with good stability, high encapsulation efficiency, and increased bioaccessibility of quercetin after in-vitro digestion. The best results were obtained using low molecular weight chitosan and high degree of deacetylation.

Summary: This study compared the physicochemical characteristics of beta-chitins and chitosans extracted from different parts of cuttlefish bones with that of squid beta-chitin. The source was found to play a significant role in determining the reaction behavior during the extraction of chitin and preparation of chitosan. It was also demonstrated that the large quantities of bones discarded annually by cuttlefish processing units can be valorized by producing beta-chitin and chitosan.

Summary: Microbially influenced corrosion (MIC) of metals is a significant industrial problem with annual economic losses of 300-500 billion dollars worldwide. Eco-friendly coatings embedded with corrosion inhibitors developed from natural products, such as cephalopod chitosan, show potential for MIC prevention or control due to their unique biological properties. Chitosan acts as an antimicrobial coating substance by binding to the bacterial cell wall and disrupting its functions. It can also serve as a matrix for embedding other antimicrobial or anticorrosive substances to achieve synergistic effects. Field and laboratory experiments will be conducted to test this hypothesis and identify new eco-friendly MIC inhibitors.

Summary: Crosslinking affects the mechanical behavior and tissue metabolism of collagen-based tissues. Aging and diabetes alter the crosslinking type and density, thus changing tissue properties. High-connectivity enzymatic crosslinking and advanced-glycation end-products result in uniform deformation under daily activity, while low-connectivity enzymatic crosslinking does not. High-connectivity model displays more sliding, while AGEs induce instability in structures near the binding sites.
