Consumption of unsafe food is one of the most important public health concerns. Trace elements' contamination caused by direct or indirect activities of mining industries is of importance in this respect. The present study was conducted to assess the chronic dietary exposure and related health risks of trace elements through the intake of selected vegetables and fruits grown under the impact of mining industry in Syunik region (Armenia). Consumption data were obtained via food frequency questionnaire and the concentrations of Cu, Mo, Ni, Cr, Pb, Zn, Hg, and Cd in different fruits and vegetables were determined. Moreover, by combining concentration data with consumption data, estimated daily intake, and target hazard quotient were assessed for each element. The results obtained showed that mean concentrations for Pb and Hg in some vegetables exceeded maximum acceptable levels set by international organizations. Hazard indexes > 1 have been obtained in some cases indicating that for some vegetables (particularly for potato, carrot, maize, onion leaf, grape, bean, beet, sweet pepper, eggplant, and tomato) habitual consumption has a potential to pose adverse health effect to the local population.

Polyphenols as modulators of pre-established gut microbiota dysbiosis: State-of-the-art

Romina Molinari, Nicolo Merendino, Lara Costantini

Summary: The gut microbiota dysbiosis is associated with various diseases, and dietary polyphenols may help regulate dysbiosis by promoting the growth of beneficial bacteria. However, more research is needed to understand the role of polyphenols in pre-existing dysbiosis.

Risk assessment of potentially toxic trace elements via consumption of dairy products sold in the city of Yerevan, Armenia

Davit Pipoyan, Astghik Hovhannisyan, Meline Beglaryan, Alberto Mantovani

Summary: This study investigated the levels of potentially toxic trace elements in dairy products sold in Yerevan's markets and assessed the potential health risks for the adult population in the city. The results indicated potential health concerns for the intake of lead and cadmium from dairy products.

Trans-Fatty Acids in Fast-Food and Intake Assessment for Yerevan's Population, Armenia

Davit Pipoyan, Meline Beglaryan, Seda Stepanyan, Nicolo Merendino

Summary: There is a lack of data on trans-fatty acid (TFA) content in food products and their consumption levels in Armenia. This study aims to assess the dietary exposure of TFAs through fast-food consumption in Yerevan. The results indicate that while TFA intake does not exceed the WHO limit, it still significantly contributes to daily TFA intake.

Compositional features of Pb in agricultural soils and geochemical associations conditioning Pb contents in plants

Gevorg Tepanosyan, Davit Pipoyan, Meline Beglaryan, Lilit Sahakyan

Summary: This study used compositional data analysis and geospatial mapping to investigate the geochemical associations of lead in agricultural soils and its impact on lead contents in plants. The results showed that soil chemical composition was influenced by geological peculiarities and potential sources of chemical elements' release. Different geochemical associations influenced the lead content in plants, with carbonates negatively affecting the availability of lead in plants.

Assessing Dietary Intakes from Household Budget Survey in Armenia, 2008-2019

Summary: This study analyzes household budget surveys in Armenia to assess trends in food consumption and nutrient intake. The results show a decrease in the consumption of all types of foods, particularly plant-origin foods. The energy and macronutrient intakes of Armenians have also decreased over time, while the contribution of each food group to total energy and nutrient intake remained unchanged. Cereals and bakery products make up the majority of energy and nutrient intake. The findings highlight the need to raise awareness of nutritional requirements and address unhealthy dietary practices in Armenia.

Health risks of heavy metals in food and their economic burden in Armenia

Davit Pipoyan, Stella Stepanyan, Meline Beglaryan, Seda Stepanyan, Robert Mendelsohn, Nicole C. Deziel

Summary: Mining in Armenia leads to excessive heavy metal contamination of agricultural products, which poses adverse health effects. This study measures the concentrations of toxic heavy metals in food samples from local markets and combines them with data from a diet survey to estimate people's daily intake. The findings show that lead exposure from food is a safety concern, with over 50% of the population exceeding the benchmark dose level set by the European Food Safety Authority. Additionally, the study reveals that lead exposure has the potential to increase blood pressure, lower IQ levels, and reduce lifetime earnings.

Omega-3 Polyunsaturated Fatty Acids (n-3 PUFAs) for Immunomodulation in COVID-19 Related Acute Respiratory Distress Syndrome (ARDS)

Francesca Velotti, Lara Costantini, Nicolo Merendino

Summary: COVID-19 can lead to ARDS, which is caused by severe lung damage. DHA and EPA n-3 PUFAs have been proposed as potential treatments for COVID-19-related ARDS, but clinical trials have shown contradictory results. Further research is needed to determine the therapeutic potential of n-3 PUFAs in COVID-19-related ARDS.

Assessment of Heme and Non-Heme Iron Intake and Its Dietary Sources among Adults in Armenia

Davit Pipoyan, Seda Stepanyan, Meline Beglaryan, Alberto Mantovani

Summary: This study aimed to analyze the intake of Fe and its dietary sources among adults in Armenia. The results showed that a high proportion of adults had a lower intake of Fe than the average requirements. Bread, fruits, and vegetables were the main sources of Fe, while heme Fe intake was very low. Females had lower Fe intake compared to males, and there were significant differences in Fe intake between regions. Comprehensive nutritional strategies are needed to reduce iron deficiency in Armenia.

Antioxidant Profile and Sensory Analysis in Olive Oils of Different Quality Grades

Maria Teresa Frangipane, Lara Costantini, Nicolo Merendino, Riccardo Massantini

Summary: This study investigated the antioxidant capacity and sensory analysis of olive oils of different quality grades, aiming to define differences useful for quality discrimination. Total phenolic content could discriminate the lower quality grade olive oil, Lampante, with significantly lower values compared to other oils. Sensory attributes and antioxidant capacity were positively correlated with extra-virgin and virgin olive oil categories. However, the evaluated parameters were unable to clearly separate the extra-virgin and virgin olive oil categories.

Hazelnut Skin Waste as a Functional Ingredient to Nutritionally Improve a Classic Shortbread Cookie Recipe

Lara Costantini, Maria Teresa Frangipane, Romina Molinari, Stefania Garzoli, Riccardo Massantini, Nicolo Merendino

Summary: Hazelnut skin, a high-content food waste, was integrated into classic shortbread cookies at 5% and 10% ratios to replace butter with unsaturated fats naturally present in hazelnut skin. The addition of 10% hazelnut skin resulted in increased monounsaturated oleic acid and decreased saturated palmitic acid, as well as a significant increase in ash content. Although the 5% formulation had higher consumer acceptance, 35% of the interviewed population showed willingness to purchase the 10% formulation, indicating its commercial potential.
