Summary: OTA is a nephrotoxin produced by certain fungal species and commonly found in agricultural commodities. This study examined the thermal stability of OTA in the presence of sugars commonly added to food products, finding that heating OTA with sugars led to changes in its degradation products, with fructose resulting in significantly lower OTA levels and a shift towards less toxic degradation products.

Summary: The study found that Cryptococcus podzolicus Y3 efficiently eliminated ochratoxin A (OTA) and converted it into non-toxic ochratoxin A (OTa) in different media. The elimination substances produced by the strain were heat stable and involved intracellular proteins. Additionally, C. podzolicus Y3 also had the ability to degrade citrinin (CIT), although the efficiency was lower than single mycotoxin degradation.

Summary: Ochratoxin A (OTA) is a potent mycotoxin mainly produced by toxicogenic strains of Aspergillus spp. Previous studies have focused on degradation strains and detoxifying enzymes. A gene N-acyl-l-amino acid amidohydrolase NA, an isoenzyme of ADH3, was identified in a study, which improved the stability of ADH3 and enhanced the detoxification efficiency in strain CW117.

Summary: Ochratoxin A (OTA) is a potent mycotoxin mainly produced by toxicogenic strains of Aspergillus spp. and seriously contaminates foods and feedstuffs. We identified a gene N-acyl-L-amino acid amidohydrolase NA from strain CW117, which is an isoenzyme of the efficient detoxifying enzyme ADH3. Isoenzyme NA was identified as a factor that improved the stability of ADH3 in CW117 and, thus, enhanced the degradation activity of the strain.

Summary: A highly sensitive ELISA method using a newly produced monoclonal antibody was developed for the detection of OTA in food samples. The ELISA exhibited ultra-sensitivity with IC50 and LOD values of 34.8 pg mL(-1) and 1.5 pg mL(-1), respectively. The antibody showed no cross-reactivity with other mycotoxins, and the ELISA could also determine total levels of ochratoxins in food samples.

Summary: Patulin is a mycotoxin that contaminates apples and apple products, but can be transformed into E-ascladiol by extracts from Gluconobacter oxydans ATCC 621. The identification and characterization of enzymes involved in the transformation provide insights into their potential application for patulin detoxification.

Summary: This study reports a super efficient enzyme, ADH3, that can rapidly transform OTA into non-toxic ochratoxin-a. Compared to other hydrolases, ADH3 degrades OTA faster with higher catalytic efficiency and exhibits good temperature adaptability. This enzyme shows promising potential for industrial applications.

Summary: Mycotoxins are important indicators of product quality and can negatively affect human health. This study investigated the concentration of mycotoxins in walnuts collected from private household gardens in Lublin Province. The results showed that a high percentage of the samples exceeded the maximum residue levels for total aflatoxin concentration and aflatoxin B1 concentration.

Summary: The study found a strong correlation between OTA levels and grape skin thickness and hardness, with grapes with lower thickness and hardness showing higher OTA levels. Vitis vinifera showed lower resistance to A. carbonarius compared to hybrid and V. labrusca grapes. Chardonnay (V. vinifera) and Italia (V. vinifera) grapes exhibited higher susceptibility to A. carbonarius, while hybrids (BRS Lorena, BRS Violeta), V. labrusca (Isabel, Bordo), and Italia (V. vinifera) grapes showed higher fungal resistance.
