Summary: In this study, millimeter calcium alginate beads encapsulated with recrystallized starch were constructed to reduce the digestion rate of starch in the human body and improve the content of slowly digestible starch and resistant starch. The results showed that the beads maintained high hardness and chewiness, and their swelling power and solubility were lower than that of native starch. The content of slowly digestible starch and resistant starch increased compared to native starch. This study has important implications for regulating the health of people with diabetes and obesity.

Summary: A magnesium-modified biochar was prepared through solvent-free ball milling with a precursor of MgCl2 center dot 6H(2)O. Recyclable biochar beads were then fabricated by introducing sodium alginate and Fe3O4. These beads exhibited excellent adsorption performance for phosphate due to the formation of magniferous crystals on the biochar surface, resulting in accelerated electrostatic interactions and precipitation. The beads also showed excellent magnetism-driven recyclability, avoiding secondary contamination and expanding the application field of the adsorbent.

Summary: This study investigated the detailed molecular structural factors that modulate the texture of liquid core alginate beads. It was found that both high molecular weight and low M/G ratio alginate beads generate higher bursting force. The G-block plays a role in faster dimerization, resulting in a compact gel network and long chains that provide elastic response through interchain interaction. Alginate structures can be varied to design alginate-based food products with desired textural profiles.

Summary: Crosslinking affects the mechanical behavior and tissue metabolism of collagen-based tissues. Aging and diabetes alter the crosslinking type and density, thus changing tissue properties. High-connectivity enzymatic crosslinking and advanced-glycation end-products result in uniform deformation under daily activity, while low-connectivity enzymatic crosslinking does not. High-connectivity model displays more sliding, while AGEs induce instability in structures near the binding sites.

Summary: The potential of multi-layer nanoemulsions for improving the cellular uptake, antioxidant activity, and in vitro bioaccessibility of alpha-tocopherol was examined. The results showed that the multi-layer nanoemulsions significantly enhanced the cellular uptake and antioxidant activity of alpha-tocopherol compared to free coumarin 6. Furthermore, the use of chitosan and dextran sulfate as wall materials in the multi-layer nanoemulsions led to even higher cellular uptake, in vitro bioaccessibility, and antioxidant activity of alpha-tocopherol.
