Recent Advances in Bioactive Compounds, Health Functions, and Safety Concerns of Onion (Allium cepa L.)

Onion, a common vegetable worldwide, contains diverse phytochemicals with major bioactive constituents being phenolic and sulfur-containing compounds. Research has shown that onion and its bioactive compounds possess various health functions, including antioxidant, anti-inflammatory, and anticancer properties.
Onion (Allium cepa L.) is a common vegetable, widely consumed all over the world. Onion contains diverse phytochemicals, including organosulfur compounds, phenolic compounds, polysaccharides, and saponins. The phenolic and sulfur-containing compounds, including onionin A, cysteine sulfoxides, quercetin, and quercetin glucosides, are the major bioactive constituents of onion. Accumulated studies have revealed that onion and its bioactive compounds possess various health functions, such as antioxidant, antimicrobial, anti-inflammatory, anti-obesity, anti-diabetic, anticancer, cardiovascular protective, neuroprotective, hepatorenal protective, respiratory protective, digestive system protective, reproductive protective, and immunomodulatory properties. Herein, the main bioactive compounds in onion are summarized, followed by intensively discussing its major health functions as well as relevant molecular mechanisms. Moreover, the potential safety concerns about onion contamination and the ways to mitigate these issues are also discussed. We hope that this paper can attract broader attention to onion and its bioactive compounds, which are promising ingredients in the development of functional foods and nutraceuticals for preventing and managing certain chronic diseases.

Starter cultures derived from species such as Staphylococcus, Penicillium, Debaryomyces, Pediococcus, and Lactobacillus have shown potential in preventing microbiological hazards and improving flavor quality.

Improvement of the solubility and emulsification of rice protein isolate by the pH shift treatment

Quantitative lipidomic analysis of egg yolk, yolk granule, and yolk plasma

Quantitative Proteomic Analysis of Yorkshire Pig Liver Reveals Its Response to High Altitude

Summary: This study compared the protein profiles in the livers of three different Yorkshire pig breeds (SNY, LZY, JZY) using quantitative proteomics. A total of 6804 proteins were identified, 6471 of which were quantified, and 774 differentially expressed proteins (DEPs) were identified. The study found that LZY pigs had higher energy metabolism levels in response to high altitudes, while SNY pigs had suppressed energy output. The liver of Yorkshire pigs locally regulated antioxidant enzymes and showed differential expression of ribosomal proteins in different altitudinal environments.

Comparison of structures and emulsifying properties between water-extracted pectins from Fructus aurantii

Summary: The structures of two water-extracted pectic polysaccharides from Fructus aurantii were investigated, and their effects on emulsifying stability were evaluated. Both FWP-60 (extracted by cold water and 60% ethanol precipitation) and FHWP-50 (extracted by hot water and 50% ethanol precipitation) were highly methyl-esterified pectins composed of homogalacturonan (HG) and highly branched rhamnogalacturonan I (RG-I) regions. FWP-60 exhibited better emulsion stability compared to FHWP-50.

Quantitative N-Glycoproteomic Analysis of Cattle-Yak and Yak Longissimus Thoracis

Summary: In this study, the N-glycosylated protein profiles of cattle-yak longissimus thoracis (CYLT) and yak longissimus thoracis (YLT) were compared using quantitative proteomics techniques. Differential N-glycosylated proteins (DGPs) were screened from the quantified N-glycoproteins, indicating the key role of N-glycosylation levels in the differences between CYLT and YLT. The findings highlight the importance of N-glycosylation in regulating extracellular matrix organization and lysosomal activity.

Antioxidant Activities, Phenolic Compounds, and Sensory Acceptability of Kombucha-Fermented Beverages from Bamboo Leaf and Mulberry Leaf

Summary: This paper explores the production of two novel kombucha beverages with bamboo leaf or mulberry leaf, and compares the effects of fermentation with or without leaf residues on the antioxidant properties of kombucha. The results show that both types of kombucha have high antioxidant capacities, while kombucha fermented with bamboo leaf residues significantly enhances its antioxidant capabilities, total phenolic content, concentrations of some compounds, and sensory acceptability. Fermentation with leaf residues has no significant effect on mulberry leaf kombucha.

pH sensitive cold-set hydrogels based on fibrinogen hydrolysates/ carrageenan: Insights of rheology, coacervation, microstructure and antioxidant ability

Summary: The effect of pH treatments on the coacervation mechanism of carrageenan and fibrinogen hydrolysates was investigated. Hydrogels derived from the hydrolysis of alcalase showed the best properties at pH 7.0. These hydrogels had the highest gel strength, best viscoelasticity, and smaller pore sizes. They also showed strong antioxidant capacity and improved preservation times in meat samples.
