Summary: The objective of this work is to develop zein-based nanoparticles for the delivery of natural polyphenols. Through the atomizing/antisolvent precipitation process, carboxymethyl chitosan-coated zein/soy lecithin nanoparticles were successfully fabricated. These nanoparticles showed desirable redispersibility and physicochemical stability. The encapsulation of resveratrol in the optimized zein-based nanoparticles resulted in improved dissolution rate, bioaccessibility, and scavenging activity compared to free resveratrol. The nanoparticles also exhibited a higher retention rate during storage. Therefore, zein-based nanoparticles have great potential as carriers for natural polyphenols.
