Summary: The present study successfully co-encapsulated cinnamon extract and zein hydrolysate with nanoliposomes, resulting in composite nanoliposomes with high antioxidant activity. The co-loading of cinnamon extract and zein hydrolysate significantly decreased the particle size of the oxidized nanoliposomes and formed electrostatic interactions. This highlights the potential of the co-loaded nanoliposomes as natural antioxidants in the food industry.

Summary: The study showed that Annona crassiflora fruit peel can lower lipid parameters and improve oxidative stress in hyperlipidemic mice. The polyphenols in the fruit peel increased HDL levels, reduced lipid peroxidation and protein carbonylation, and restored antioxidant defense systems. This natural source of bioactive molecules displayed potential lipid-lowering and hepatoprotective activities by reducing oxidative damage and maintaining antioxidant systems impaired by hyperlipidemia.

Summary: This study evaluated the activities of two molecular antioxidants and their combination in scavenging free radicals and reducing oxidative stress. The results showed that the combination of gallic acid (GA) and nicotinamide adenine dinucleotide (NADH) exhibited a synergistic effect, enhancing their antioxidant activity. Immobilizing them on clay nanoplatelets expanded their potential applications.

Summary: In this study, a sodium alginate/protocatechuic acid/iron hydrogel was prepared by rapid self-assembly of protocatechuic acid and Fe3+ under different pH conditions, without the addition of other chemical reagents. The structure of the hydrogel was characterized and the results showed significant differences in the structures prepared at different pH values. The hydrogel exhibited higher gel strength, water holding capacity, and thermal stability, and was able to control the release of bioactive substances in simulated gastrointestinal conditions.
