Summary: This study focuses on the production and chemical modifications of EPS produced by Lactobacillus plantarum BR2, and the evaluation of their biological properties. The results show that the modified derivatives have better antioxidant properties compared to the unmodified form. Among the derivatives, acetylated EPS (a-EPS) exhibits the highest DPPH radical scavenging and total antioxidant activity, while sulphated EPS (s-EPS) shows the highest reducing power potential and hydroxyl radical scavenging activities. The improved antioxidant properties open up better avenues for EPS application in the food and pharma sectors.

Summary: This study optimized the submerged cultivation of L. reuteri strain DSM 20016 (T) to increase the production of crude EPS. Through experimental design and modeling analysis, sucrose, yeast extract, and sodium acetate were identified as important factors impacting crude EPS production. Under optimal fermentation conditions, the strain was able to produce a significant amount of high-quality crude EPS.

Summary: Glycosyltransferases synthesize exopolysaccharides (EPS) by modifying the properties of the polymers, such as glycosidic linkage, branching, length, mass, and conformation. A study on Lactobacillus plantarum BR2 (Accession No: MN176402) identified twelve glycosyltransferase genes, including BR2gtf (1116 bp), which was cloned into the pNZ8148 vector as an EPS biosynthetic glycosyltransferase. The over-expression of gtf gene in L. plantarum BR2 using a nisin-controlled expression system resulted in a 54.4% increase in EPS production, reaching a maximum of 23.2 ± 0.5 g/L in a 5 L bioreactor study after 72 h of fermentation. This study demonstrates a potential molecular strategy to enhance exopolysaccharide production in lactic acid bacteria.

Summary: This study used Lactobacillus plantarum-HDS27 strain to enhance the production of riboflavin. The production medium was optimized by adjusting parameters including pH, temperature, glucose, and yeast extract. The study found that optimizing conditions such as glucose, yeast extract, pH 6, temperature at 40 degrees C, and 3% inoculum size led to maximum riboflavin production. The yield of riboflavin increased 3.66-fold after 24 hours with the optimized parameters. The research suggests that Lactobacillus plantarum-HDS27 could be a promising strain for large-scale industrial production of riboflavin.
