Anthocyanins: New techniques and challenges in microencapsulation

Anthocyanins are a bioactive compound belonging to the flavonoid classthatis present in human nutrition through plant-based foods. Due to their antioxidant properties, several health benefits related to their consumption are reported in the literature. The stability of the color and the properties of anthocyanins is strongly affected by pH, solvent, temperature, and other environmental conditions. In addition, the insufficient residence time of anthocyanins in the upper digestive tract causes apartialabsorption, which needs to be improved. These factshave led researchers to investigate new forms of processing that provide minimal degradation. Microencapsulation is a promising possibility to stabilize anthocyanin extracts and allow their addition to food products in a more stable form. The microcapsules can still provide a prolonged gastrointestinal retention time caused by the improvement of the bioadhesive properties in the mucus covering the intestinal epithelium. Although there are efficient and emerging techniques, anthocyanins microencapsulation is still a challenge for the food industry. The purpose of this work is to provide an overview of anthocyanins structure, absorptionand protection, and to show the main conventional and emerging microencapsulation methods and their pros and cons.

Characterization of Capsicum oleoresin microparticles and in vivo evaluation of short-term capsaicin intake

Summary: This study evaluated gum arabic, modified corn starch, and modified malt as encapsulating agents for Capsicum oleoresin. Capsicum oleoresin microparticles obtained by spray drying showed good physicochemical properties and in vivo effects. The microparticles exhibited high antioxidant activity, good solubility in water, and were able to reduce weight gain without adverse effects on liver function.

Comparison of chemical and nutritional compositions between aromatic and non-aromatic rice from Brazil and effect of planting time on bioactive compounds

Summary: The objective of this study was to investigate and characterize new rice cultivars with nutritional and economic potential. The study found that Brazilian aromatic rice had higher levels of ash, protein, lipid, alpha-tocopherol, and unsaturated fatty acids compared to Brazilian non-aromatic rice. Additionally, ingestion of aromatic rice resulted in a lower insulinemic response. The planting time influenced the bioactive compound content, but the optimal planting time for maximizing these compounds was inconclusive.

Resistant starch: A promising ingredient and health promoter

Researchers worldwide have been investigating the inclusion of resistant starch in the diet and its potential to counteract chronic non-communicable diseases.

Jaboticaba (Myrciaria jaboticaba) peel extracts induce reticulum stress and apoptosis in breast cancer cells

Summary: Jaboticaba peel extracts (JE1 and JE2) were found to exhibit anticancer activity against breast cancer cells. Both JE1 and JE2 showed inhibitory effects on the clonogenic potential, anchorage-independent growth, cell viability, migration, and invasion of breast cancer cells. Mechanistically, JE1 induced apoptosis and increased endoplasmic stress. These findings suggest that Jaboticaba peel extracts have potential for further development as a treatment for breast cancer.

Collagen supplementation in skin and orthopedic diseases: A review of the literature

Summary: Collagen is a major component of the extracellular matrix in the skin and articular cartilage, affecting the body's mechanical and tissue formation properties. Literature review shows that collagen supplementation can improve skin conditions and orthopedic ailments by reducing wrinkles, increasing elasticity and hydration, and enhancing bone strength and joint mobility. This indicates the potential economic and health benefits of collagen derived from food industry by-products.

Extraction of bioactive compounds from Peruvian purple corn cob by high isostatic pressure

Summary: The aim of the study was to extract bioactive compounds from purple corn cob using high isostatic pressure at different temperatures. The extract obtained by high pressure extraction showed higher antioxidant activity and bioactive compound content compared to conventional extraction. High isostatic pressure increased the extraction of bioactive compounds by more than 50% and obtained them in shorter times, offering a new alternative and eco-friendly method for extracting bioactive compounds from plant tissues.

Extraction of bioactive compounds from Peruvian purple corn cob (Zea Mays L.) by dynamic high pressure

Summary: The study evaluated the effects of dynamic high pressure at different processing temperatures on the extraction of bioactive compounds from Peruvian purple corn cob. The results showed that dynamic high pressure at 60 MPa / 45 degrees C was capable of obtaining extracts with bioactive compound contents and high antioxidant activity corresponding to those obtained using the conventional process. Furthermore, the dynamic high pressure significantly increased the extraction of anthocyanins.

The application of ice glazing containing D-sodium erythorbate combined with vacuum packaging to maintain the physicochemical quality and sweet/umami non-volatile flavor compounds of frozen stored large yellow croaker (Pseudosciaena crocea)

Summary: This study investigated the use of ice glazing containing D-sodium erythorbate (DSE) and vacuum packaging to maintain the quality of large yellow croaker during frozen storage. The results showed that vacuum packaging effectively inhibited ice crystal growth and minimized water loss, while the combination of vacuum packaging and 0.3% DSE-infused ice glazing maintained freshness indicators at low levels throughout the 300-day storage period. This combination was considered the most effective in preserving the quality of the fish.

Hypoglycemic effect and intestinal transport of phenolics-rich extract from digested mulberry leaves in Caco-2/insulin-resistant HepG2 co-culture model

Summary: This study investigated the transport and hypoglycemic effects of phenolics in mulberry leaves using an in vitro digestion model. Luteoforol and p-coumaric acid were found to be the primary phenolics strongly correlated with the hypoglycemic ability of mulberry leaves.

Summary: This study proposed an integrated and automated procedure for extracting, separating, and quantifying bioactive compounds from coffee co-products. By optimizing the extraction, separation, and analysis method, real-time analysis was achieved. The results suggest that coupling different techniques can efficiently extract, separate, and analyze phenolic compounds, providing an integrated method to produce high-added value ingredients for various applications.

Geographical origin discriminatory analysis of onions: Chemometrics methods applied to ICP-OES and ICP-MS analysis

Summary: Geographical origin plays a crucial role in determining the quality and safety of agricultural products. In this study, ICP analysis was used to determine the inorganic elemental content of onions and identify their geographical origin. Chemometric methods were applied to analyze the ICP results, and the accuracy of distinguishing between Korean and Chinese onions was found to be excellent. The findings suggest that this method can be beneficial for identifying agricultural products.
