Invited review: β-hydroxybutyrate concentration in blood and milk and its associations with cow performance

Hyperketonemia (HYK) is one of the most frequent and costly metabolic disorders in high-producing dairy cows and its diagnosis is based on beta-hydroxybutyrate (BHB) concentration in blood. In the last 10 years, the number of papers that have dealt with the impact of elevated BHB levels in dairy cattle has increased. Therefore, this paper reviewed the recent literature on BHB concentration in blood and milk, and its relationships with dairy cow health and performance, and farm profitability. Most studies applied the threshold of 1.2 mmol/l of BHB concentration in blood to indicate HYK; several authors considered BHB concentrations between 1.2 and 2.9 mmol/l as subclinical ketosis, and values > 3.0 mmol/l as clinical ketosis. Results on HYK frequency (prevalence and incidence) and cow performance varied according to parity and days in milk, being greater in multiparous than in primiparous cows, and in the first 2 weeks of lactation than in later stages. Hyperketonemia has been associated with greater milk fat content, fat-to-protein ratio and energy-corrected milk, and lower protein and urea nitrogen in milk. The relationships with milk yield and somatic cell count are still controversial. In general, HYK impairs health of dairy cows by increasing the risk of the onset of other early lactation diseases, and it negatively affects reproductive performance. The economic cost of HYK is mainly due to impaired reproductive performance and milk loss. From a genetic point of view, results from the literature suggested the feasibility of selecting cows with low susceptibility to HYK. The present review highlights that milk is the most promising matrix to identify HYK, because it is easy to sample and allows a complete screening of the herd through BHB concentration predicted using mid-IR spectroscopy during routine milk recording. Further research is needed to validate accurate and convenient methods to discriminate between cows in risk of HYK and healthy animals in field conditions and to support farmers to achieve an early detection and minimise the economic losses.

β-Casein variants differently affect bulk milk mineral content, protein composition, and technological traits

Summary: The concentration of beta-casein B is positively correlated with protein, casein, and fat content in milk. Higher concentrations of beta-casein A1 and B are associated with faster rennet coagulation time and firmer curd, as well as higher levels of calcium and phosphorus compared to the A2 variant.

Nuclear magnetic resonance spectroscopy to investigate the association between milk metabolites and udder quarter health status in dairy cows

Summary: Nuclear magnetic resonance spectroscopy was used to study the relationship between milk metabolome and udder quarter health status in dairy cows. Analysis showed that each cow could be identified based on its milk metabolomic fingerprint, and quarter milk samples of cows defined as cases were found to have mostly coagulase-negative staphylococci. Further analysis on metabolites levels indicated potential novel indicators of udder health status and milk quality.

Feasibility of pocket-sized near-infrared spectrometer for the prediction of cheese quality traits

Summary: This study evaluated the feasibility of using a low-cost pocket-sized near-infrared spectrometer to predict cheese composition, achieving good results for fatty acid and nitrogen content. Although mineral content prediction was less accurate, the study showed the potential of miniaturized NIR instruments in the dairy industry.

Detailed comparison between organic and conventional milk from Holstein-Friesian dairy herds in Italy

Summary: This study compared organic and conventional milk from farms in Northern Italy, finding that overall milk composition did not significantly differ between the two farming systems. Egg Quality of Italian Local Chicken Breeds: II. Composition and Predictive Ability of VIS-Near-InfraRed Spectroscopy

Summary: This study characterized the composition of eggs from various local chicken breeds in Italy and developed VIS-NIR models to predict their composition. The results showed differences in moisture content, protein content, lipid content, and cholesterol content among different breeds. The prediction models performed better on freeze-dried samples compared to fresh samples. These findings demonstrate the potential of infrared technology in predicting the composition of eggs from local chicken breeds.

Comparison of chemical composition of organic and conventional Italian cheeses from parallel production

Summary: This study compared the composition, minerals, and fatty acid profile of organic and conventional Italian cheeses. The results showed minimal differences in chemical composition between organic and conventional cheeses, regardless of the type considered. Asiago PDO fresco exhibited the fewest differences between organic and conventional varieties.

Genomics of Dwarfism in Italian Local Chicken Breeds

Summary: This study characterized the sequence variations associated with the dwarf phenotype in three Italian chicken breeds and investigated the genes associated with their phenotype. The results showed significant SNPs associated with dwarfism in the MERI and MUG breeds, which shared a candidate genomic region on chromosome 1. However, the PPP breed did not show any association with this region.

Pathogen Detection via Quantitative PCR in Milk of Healthy Cows Collected Using Different Sampling Protocols

Summary: The prevalence of pathogens in milk from apparently healthy cows in Italian dairy farms was evaluated using qPCR. The most commonly detected pathogens were CNS and Streptococcus uberis. Therefore, pathogen-specific interventions are needed to improve the udder health of dairy cows.

Summary: This study investigates the perceptions of organic livestock producers in Mediterranean and North/Western European countries. The findings reveal that finding information on alternatives to antiparasitics and antibiotics is more difficult than finding information on bedding materials. The study identifies feeding/nutrition, animal health, and welfare as the most relevant topics for organic farmers. Furthermore, the research shows that organic farmers still rely on conventional treatments.

Milk-related performances of Murciano-Granadina goats reared in Italy compared to cosmopolitan breeds

Summary: This study compared the milk yield and composition of Murciano-Granadina (MG) goats with Saanen (SA) and Alpine (AL) goats under the same farming system. The results showed that despite lower milk yield, MG goats produced high-quality milk and were less sensitive to season, making them suitable for the current Italian farming context.

Effect of commingling animals at sorting facilities on performances and antibiotic use in beef cattle

Summary: This study aimed to evaluate the effects of a commercial supplement containing VitE, organic Se, yeast derivate, and S. baicalensis extract on feed intake, health and oxidative status, and growth performances of beef cattle. The results showed that this dietary inclusion did not have any detrimental effects on feed digestibility and cattle performance.
