Summary: By analyzing lipidomics and RNA sequencing data of 3T3-L1 cells, we observed significant changes in lipid composition and gene expression patterns during adipogenesis. Several genes were up-regulated, potentially enhancing glucose transport and increasing intracellular triacylglycerol accumulation. Other genes were also up-regulated, likely leading to elevated levels of intracellular free fatty acids and synthesis of various lipids. These findings provide important insights into the pathophysiology of obesity.

Summary: Fucoidan from marine algae, specifically Ecklonia cava, has been found to have anti-obesity effects. The purified fucoidan fractions from Ecklonia cava showed significant reductions in lipid accumulation in fat cells, both in vitro and in high-fat diet-induced obese mice. Oral administration of Ecklonia cava extract led to reduced body weight, serum lipid content, and white adipose tissue mass. These findings suggest that Ecklonia cava extract and its fucoidan fractions can be used as anti-obesity ingredients in the food and nutraceutical industries.

Summary: Aspergillus oryzae KCCM 11372 was used to enhance the production of beta-glucan through humidity control strategies. Solid-state fermentation (SSF) at 60% humidity increased the yields of enzymes, fungal biomass, and beta-glucan. The extracts of beta-glucan containing fermented brown rice (beta glucan-FBR) showed no cytotoxicity and inhibited lipid accumulation in 3T3-L1 cells by decreasing the expression of adipogenesis-related genes.

In vivo, oral administration of red yeast rice for 8 weeks significantly decreased body weight and serum lipid profiles without liver damage. Red yeast rice inhibited lipid accumulation in adipocytes and provided a better understanding of the health benefits of kimchi.
