Secondary analysis of Bolivian Demographic and Health Surveys 1994, 1998 and 2003 revealed a steady raising trend in levels of overweight and obesity among women in childbearing age (20-45 years), reaching 30% and 15% respectively in 2003. Adolescents' cross-sectional data suggest that overweight and obesity are mainly found in urban areas. Applying the Bolivian body mass index-for-age reference, obesity reached 5% in adolescents, while overweight affects 14% of adolescents. This overview highlights the importance of including the prevention of weight gain among the public health nutrition policies in Bolivia.

Turning your weakness into my strength: How counter-messaging on conventional meat influences acceptance of cultured meat

Chad M. Baum, Wim Verbeke, Hans De Steur

Summary: This study explores the use of counter-messaging to promote acceptance of cultured meat and investigates the determinants of acceptance change. The focus of counter-messaging was found to be insignificant, but such an approach generally enhances consumer acceptance. Acceptance of cultured meat is higher among men, younger consumers, and frequent meat-eaters, and the change in acceptance is influenced by perceived consumer effectiveness and prior knowledge.

How dish components influence older consumers' evaluation? - A study with application of conjoint analysis and eye tracking technology

Xiao Zhou, Federico J. A. Perez-Cueto, Christian Ritz, Wender L. P. Bredie

Summary: This study investigated older people's evaluations towards dishes and found that main course and vegetables have the highest influence on willingness to try, perceived familiarity, perceived healthiness, and total eye fixation time. Females were more willing to try veggie balls than meatballs and paid more attention to healthy eating and the price, variety, organic and health value of a dish.

Duc Tran, Ieben Broeckhoven, Yung Hung, Nguyen Hoang Diem My, Hans De Steur, Wim Verbeke

Summary: The concern for food safety and quality pushes governments and private sectors to improve consumers' confidence in food systems through certifications and traceability systems. However, little is known about consumers' valuation of food labelling schemes. This study explores Vietnamese consumers' willingness to pay for existing certifications, branding, and traceability labelling schemes and finds that trust is a critical factor shaping their willingness to pay for products bearing VietGAP label.

Why do men choose and adhere to a meatless diet?

Akvile Banyte, Irene Valentina Di Lauro, Anelia Mitova, Clara Schauman, Elena Simoniello, Federico J. A. Perez-Cueto

Summary: The purpose of this study was to investigate the influences, motives, and adherence factors behind men's choices and adherence to a meatless diet. The results showed that scientific research and animal welfare were the main influences and motives. Factors related to people, research, and recipes were reported as important factors for adherence. Age and dietary lifestyle were positive predictors, while living in the EU, skills and hardship barriers, and perceived barriers were negatively associated with long-term adherence. Feeling supported by others played a key role in adhering to the diet over time.

Vegan nutrition: a preliminary guide for health professionals

Christian Koeder, Federico J. A. Perez-Cueto

Summary: Since the beginning of the 21st century, there has been a rapid increase in interest in vegan diets worldwide. Despite misconceptions, vegan diets can offer health benefits and advantages over typical Western eating patterns. However, it is important to identify and communicate adequate dietary sources or supplements for specific nutrients focused on in vegan diets. Without supplements or fortified foods, deficiencies in vitamin B12 and other essential nutrients may occur. Ensuring sufficient nutrient status is particularly crucial during certain life stages. Currently, there is a lack of precise and practical vegan nutrition guidelines for health professionals, making it urgent to provide such recommendations based on current evidence to ensure adequate nutrient status in vegans.

Associations among social engagement, meal-related behaviour, satisfaction with food-related life and wellbeing in Danish older adults living alone

Ilona Faber, Thomas Bjorner, Tine Buch-Andersen, Federico J. A. Perez-Cueto

Summary: This study explored the associations between meal-related behavior, social engagement factors, satisfaction with food-related life (SWFL), and subjective well-being in Danish older adults living alone. The results showed that home cooking frequency and self-perceived cooking skills were positively associated with SWFL, while commensality was positively associated with SWFL but not with subjective well-being. Loneliness was negatively associated with SWFL and subjective well-being. Satisfaction with food-related life and subjective health status were positively associated with subjective well-being.

Meat consumption and flexitarianism in the Low Countries

Hans Dagevos, Wim Verbeke

Summary: This paper provides a narrative descriptive review of meat consumption in the Netherlands and Belgium from 2010 to 2020. The analysis shows that meat consumption in the Netherlands is relatively stable, while Belgium has experienced a steady decline in meat consumption over the past decade. Both countries face an increase in flexitarians and consumers who intend to reduce their meat consumption. However, there are important differences in research methodologies and sample compositions, making direct comparisons between countries challenging. The findings suggest that attitudes and intentions towards meat reduction are more prevalent than actual dietary behavioral change.

A randomized trial testing the effectiveness of virtual reality as a tool for pro-environmental dietary change

Adela Plechata, Thomas Morton, Federico J. A. Perez-Cueto, Guido Makransky

Summary: This study investigated the impact of a virtual reality intervention designed according to instructional design principles on eating behavior. The results showed that the virtual reality intervention significantly decreased individual dietary footprints and increased response efficacy and knowledge compared to the control condition. However, the intervention had no impact on intentions, self-efficacy, or psychological distance, and additional manipulation of normative feedback enhanced self-efficacy.

Food Desires and Hedonic Discrimination in Virtual Reality Varying in Product-Context Appropriateness among Older Consumers

Xiao Song, Federico J. A. Perez-Cueto, Wender L. P. Bredie

Summary: This study explored the application of immersive virtual reality (VR) in food product evaluation by comparing the effects of congruent and incongruent VR contexts on consumer acceptance. The results showed that immersive VR induced positive sensations of presence and engagement, and congruent contexts were more effective in enhancing desire and liking for the food product. This highlights the importance of VR as a tool for evaluating contextual factors in new product development.

Identifying the Key Success Factors of Plant-Based Food Brands in Europe

Listia Rini, Joachim J. Schouteten, Ilona Faber, Kai-Brit Bechtold, Federico J. A. Perez-Cueto, Xavier Gellynck, Hans De Steur

Summary: Plant-based food (PBF) is growing as an alternative to animal-based food. Europe leads in PBF market size globally. However, the high failure rate for new PBF products poses a challenge. This study aims to identify the key success factors (KSFs) from existing PBF brands. Two online surveys were conducted, collecting KSFs through card sorting and analyzing different brand clusters using cluster analysis. The findings revealed six clusters of KSFs under external and internal factors supporting PBF brand success. Different brand clusters utilized various KSFs, indicating the absence of a one-size-fits-all approach for market success.
