Summary: In this study, three major spoilage bacteria of grass carp were artificially inoculated in amino acid solutions and grass carp flesh to investigate their involvement in amino acid degradation and fish quality deterioration. The results showed that Pseudomonas putida highly degraded free amino acids and produced ammonia in grass carp flesh, while Aeromonas rivi-pollensis produced 3-Methyl-butanol and 2-Methyl-butanol through leucine and isoleucine degradation. Shewa-nella putrefaciens showed potent ornithine-decarboxylation activity and released putrescine. Additionally, when S. putrefaciens cooperated with P. putida, more putrescine was produced through the arginine deiminase pathway. In conclusion, this study provided fundamental information on the spoilage mechanisms of freshwater fish and important guidance for quality control strategies.

Summary: This study analyzed the production of eight key biogenic amines in farmed rainbow trout samples under various storage conditions, and investigated the accompanying variations in pH. The goal was to identify chemical markers for evaluating the quality of farmed rainbow trout. Histamine and tryptamine were absent, and cadaverine levels were inconsistent. Putrescine levels significantly increased at different storage temperatures. Tyramine, spermidine, and spermine levels fluctuated but were positively correlated with putrescine levels. pH levels slightly increased across all storage temperatures. The study concluded that putrescine may serve as an effective marker for evaluating the freshness of farmed rainbow trout during storage.

Summary: This study evaluated the effects of (-)-epicatechin (EC) on muscle antioxidant capacity, myofiber development, texture characteristics, and histomorphology in Yellow River carp. The results showed that the supplementation of 1000 mg/kg EC enhanced antioxidant capacity and protein content in the muscle, and promoted myofiber development. Furthermore, EC also improved muscle texture characteristics and histomorphology in Yellow River carp.

Summary: This research compared the antioxidant effects of konjac oligosaccharides (KOG) and conventional cryoprotectant (4% sucrose + 4% sorbitol) mixture on silver carp proteins during fluctuated frozen storage. It was found that KOG (3%) showed stronger interactions with protein molecules, leading to reduced surface hydrophobicity, decline in SH groups and Ca2+-ATPase, and enhanced gel strength of surimi. These findings suggest that KOG (3%) has potential as a substitute for conventional cryoprotectant in seafood frozen preservation, providing commercial benefits.

Summary: In this study, we demonstrated that bentonites can effectively reduce the content of biogenic amines (BAs) in wine, especially putrescine. Kinetic and thermodynamic studies were conducted on two commercially available bentonites, which achieved approximately 60% removal of putrescine through physisorption mechanism at an optimal concentration of 0.40 g dm-3. Both bentonites also showed promising results in more complex systems, although the adsorption of putrescine was lower due to competition with other molecules typically present in wines, such as proteins and polyphenols. Nevertheless, we managed to reduce the putrescine content below 10 ppm in both red and white wines.

Summary: During storage, the total viable counts of vacuum packaged low processed rainbow trout gradually increased, while coliform bacteria disappeared. The concentration of biogenic amines and the biogenic amine index increased over time, with the highest concentration of inosine monophosphate. The G value was found to be a more suitable indicator for assessing the quality of the gravad.

Summary: This study aimed to select Bacillus strains capable of degrading biogenic amines (BAs) from Cheonggukjang and investigate their effects on BA reduction during Cheonggukjang fermentation, with and without the presence of Enterococcus faecium, a prolific tyramine-producing species. Three BA-degrading and low BA-producing strains (B. licheniformis CH7P22, B. haynesii CH7P24, and B. velezensis CH7P28) were selected from a total of 327 isolated strains. B. licheniformis CH7P22 exhibited the largest reduction in tyramine and spermine contents during fermentation.

Summary: The cryoprotective effect of konjac oligosaccharide (KOG) on frozen silver carp protein was analyzed. Molecular dynamic simulation (MD) was used to study the interaction between KOG and myosin. The results demonstrated that KOG could stabilize the Ca2+-ATPase and gel strength of the protein. This finding has important implications for the industrial application of KOG as an effective cryoprotectant.

Summary: This study successfully identified lactic acid bacteria capable of degrading biogenic amines from kimchi and demonstrated their effectiveness in reducing amine content during Baechu kimchi fermentation.
