Summary: This study aimed to evaluate the nutritional value and potential health claims for reduced sugar biscuits containing extruded brewers' spent grain (EBSG) and fructooligosaccharides (FOS). The results showed that EBSG-added biscuits had lower glucose bioaccessibility and higher phenolic compounds bioaccessibility compared to biscuits without EBSG. Moreover, biscuits containing 17% EBSG exhibited better anti-diabetic, anti-inflammatory, and antioxidant properties. Addition of FOS improved the production of butyric acid and EBSG improved valeric acid production, both with chemoprotective effects. The combined use of FOS (15.2%) and EBSG (17%) allowed for a healthier snack formulation that meets consumer demands and achieves nutrition security.

Summary: The effect of water and sucrose treatments on the sensory quality and content of health-promoting compounds in stored baby mustard lateral buds was investigated. Sucrose treatment delayed weight loss and decline in sensory parameters, chlorophyll and sucrose content, maintained antioxidant capacity, suppressed increase in total phenolics, and even increased the content of individual glucosinolates. These findings suggest that sucrose application can maintain the sensory and nutritional qualities of postharvest baby mustard.

Summary: This study evaluated the morphological characteristics and biochemical composition of 180 carrot genetic resources, and found wide genetic variation in both qualitative and quantitative traits. Carotenoid and sugar content and composition were closely related to root color, while sugar content and composition were independent of root color. Genetic resources with elevated carotenoid and sugar content could potentially improve the agronomic traits and biochemical content of carrots.
