Antimicrobial and antioxidant activity of Majorana syriaca in Yellowfin tuna

The antimicrobial and antioxidant effect of Majorana syriaca extract, obtained by ethyl acetate, to Yellowfin tuna was examined. The extract was added to refined corn oil at different concentrations (0-3900 ppm). Minced tuna was mixed with corn oil containing the extract (tuna/oil: 3/1 w/w); the mixture was packed aerobically and stored at 0 degrees C. Microbial growth and lipid oxidation were determined periodically. Majorana syriaca extract delayed the microbial growth (total viable count, Pseudomonas sp. and lactic acid bacteria) as compared with pure minced tuna, with an increasing effect as concentration increased. Oxidation was monitored through measurement of peroxide value and thiobarbituric acid-reactive substances. Both tests showed inhibition of tuna oxidation as the concentration of the extract increased. The results of the study show the potential of M. syriaca extract in extending the shelf life of tuna fish.

Summary: The variety of metabolites produced by lactic acid bacteria (LAB) is not well characterized. This study used HPLC-UV/DAD to determine the specific metabolites produced by Lacticaseibacillus rhamnosus, Levilactobacillus brevis, and Lactiplantibacillus plantarum, and investigated their antimicrobial activity against specific food pathogens. The results identified several metabolites with potential antimicrobial properties, which could be used as natural antimicrobial ingredients in the food industry.

Summary: Breast milk from healthy women in Greece was analyzed for the presence of Lactobacillus and Bifidobacterium using realtime PCR. Colostrum samples showed higher percentages of these bacteria compared to mature milk, with higher incidence in younger women, rural areas, and normal BMI individuals. Factors like lactation stage, maternal age, and residential location may influence the bacterial composition of human milk. Realtime PCR has potential for microbiological analysis of breast milk.

Summary: This study investigated the effect of active modified atmosphere packaging on the quality and shelf-life of gilthead seabream fillets during chill storage. The results showed that the samples with CO2 emitters had slower microbial growth and longer lag phases, leading to extended shelf-life. The selection of appropriate enzymatic Time Temperature Integrators (TTIs) for shelf-life monitoring was also discussed.

Shelf Life Extension of Chicken Cuts Packed under Modified Atmospheres and Edible Antimicrobial Coatings

Summary: Convenient cuts of poultry products are highly perishable, but their shelf life can be extended using modified atmosphere packaging (MAP) or edible and biodegradable coatings. This study aimed to model the effect of MAP and active coatings enriched with antimicrobial agents on the microbial growth and shelf life of chicken cuts. The results showed that both MAP and active coatings with citrus extract had a similar effect in extending the shelf life of chicken cuts. The study demonstrates the potential of using MAP or edible coatings to improve the shelf life and commercial value of broiler chicken cuts.

High Pressure Processing under Mild Conditions for Bacterial Mitigation and Shelf Life Extension of European Sea Bass Fillets

Summary: The study aimed to quantify the effectiveness of high pressure on the inactivation of spoilage microflora and the shelf life extension of European sea bass fillets. Results showed that pressures of 100 MPa can extend the shelf life by 1-5 days, while higher pressures can increase it up to 5-fold depending on the applied pressure and temperature. High pressure treatment combined with vacuum packaging significantly extended the shelf life by 4-12 days compared to aerobically stored products. Moreover, high pressure treatment prevented lipid oxidation during storage.

Probiotic Properties and Antioxidant Activity In Vitro of Lactic Acid Bacteria

Summary: This study investigated the survival ability of four different LAB species (L. gasseri, L. rhamnosus, L. brevis, and L. plantarum) in the human gut. The results showed high resistance to simulated gastric juice for all four strains, with minimal decline in cell concentrations. L. plantarum exhibited the highest level of survival in the human gut, while all strains showed antioxidant activity. This study provides comprehensive insights into the behavior of LAB and their potential use in the food industry.
