Optimization of pressurized liquid extraction of inositols from pine nuts (Pinus pinea L.)

Pressurized liquid extraction (PLE) has been used for the first time to extract bioactive inositols from pine nuts. The influence of extraction time, temperature and cycles of extraction in the yield and composition of the extract was studied. A quadratic lineal model using multiple linear regression in the stepwise mode was used to evaluate possible trends in the process. Under optimised PLE conditions (50 degrees C, 18 min, 3 cycles of 1.5 mL water each one) at 10 MPa, a noticeable reduction in extraction time and solvent volume, compared with solid-liquid extraction (SLE; room temperature, 2 h, 2 cycles of 5 mL water each one) was achieved; 5.7 mg/g inositols were extracted by PLE, whereas yields of only 3.7 mg/g were obtained by SLE. Subsequent incubation of PLE extracts with Saccharomyces cerevisiae (37 degrees C, 5 h) allowed the removal of other co-extracted low molecular weight carbohydrates which may interfere in the bioactivity of inositols. Summary: This study highlights the potential of alfalfa as a source of bioactive carbohydrates, specifically inositols and alpha-galactooligosaccharides. Microwave-assisted extraction (MAE) was found to be a more efficient method compared to solid-liquid extraction (SLE) for extracting these compounds from alfalfa. Ultimately, the findings suggest that alfalfa could be a valuable source of bioactive carbohydrates, and MAE is a promising alternative technique to obtain functional extracts.

Summary: The traditional Spanish garlic variety Fino de Chinchon has unique textural parameters, antioxidant behavior, and pyruvic content compared to other varieties. Research into the composition and properties of this traditional variety would help raise awareness of its importance, but further studies are needed for a complete characterization. The information could also benefit farmers in terms of biodiversity protection and environmental sustainability.

A multi-analytical strategy for evaluation of quality and authenticity of artichoke food supplements for overweight control

Summary: The study developed a new multi-analytical strategy using GC-MS and HPLC-UV-MS to evaluate the quality/authenticity of artichoke-based food supplements for obesity control. Various compounds were detected in the supplements, with some potentially related to heat treatment or added ingredients. The application of this multi-analytical strategy was found to be advantageous for detecting fraudulent practices and assessing the quality of the products.

Exhaustive characterization of (semi-)volatile organic contaminants in car dust using comprehensive two-dimensional gas chromatography-Time-of-flight mass spectrometry

Quality Evaluation of Dietary Supplements for Weight Loss Based on Garcinia cambogia

Summary: Food supplements of plant origin, especially those containing (-)-hydroxycitric acid ((-)-HCA) from Garcinia cambogia, are increasingly popular among consumers for weight control and good health. However, recent controversies over their safety have raised concerns, requiring further research and monitoring of their composition. This study utilized a multi-analytical approach to determine the (-)-HCA content and other constituents in Garcinia cambogia food supplements, as well as detecting fraudulent practices in these products by comparing declared and experimentally determined values. The findings highlight the importance of quality control and the need for accurate labeling in these supplements.

Optimization of a Green Microwave-Assisted Extraction Method to Obtain Multifunctional Extracts of Mentha sp.

Summary: A microwave-assisted extraction (MAE) method was optimized to obtain multifunctional extracts from Mentha sp. leaves, which showed improved antioxidant properties and optimal antimicrobial activity for the first time. Water was selected as the extractant to develop a green procedure and enhance the bioactive properties. The optimized MAE conditions were applied to extract bioactives from 6 different Mentha species, and the resulting extracts were analyzed to characterize phenolics and assess their activities against various microorganisms.

Fingerprint of Characteristic Saffron Compounds as Novel Standardization of Commercial Crocus sativus Extracts

Summary: Food supplements made from saffron extracts are popular due to their various bioactive properties, and it is important to standardize these extracts to ensure product quality and safety. The current methods of standardization, which focus on the safranal content, may not provide accurate measurements. This study suggests using crocin isomers and trans-/cis-crocins, as well as the trans-4 GG/picrocrocin ratios, as new criteria for saffron extract standardization. The relative content of these components and their stability over 36 months in a commercial standardized saffron extract were successfully demonstrated.

Simultaneous microwave-assisted extraction of bioactive compounds from aged garlic

Summary: In this study, the simultaneous extraction of bioactives from aged garlic for use as food ingredients was optimized. The analytical methods using liquid chromatography coupled to mass spectrometry and hydrophilic interaction liquid chromatography were also optimized. A successful microwave-assisted extraction method was developed and shown as a viable alternative for the extraction of bioactives from aged garlic.

A Combined Gas and Liquid Chromatographic Approach for Quality Evaluation of Saffron-Based Food Supplements

Summary: Considering the interest in the bioactive properties of saffron (Crocus sativus L.), a new multianalytical strategy using gas chromatography coupled to mass spectrometry (GC-MS) and liquid chromatography with diode array detection coupled to mass spectrometry (HPLC-DAD-MS) was developed and validated to detect frauds affecting saffron-based food supplements (SFS). The results showed discrepancies between declared content and actual content in 65% of the cases, indicating a high susceptibility to adulteration. The multianalytical methodology also identified undeclared additives and the non-declared addition of vegetable sources other than saffron, highlighting the need for comprehensive assessment of SFS quality.

The first harmonised total diet study in Portugal: Vitamin D occurrence and intake assessment

The digestion fates of lipids with different unsaturated levels in people with different age groups

Summary: This study investigates the variations in lipid digestion profiles among individuals of different ages using in vitro digestion models. The findings suggest that adults have a more comprehensive lipid digestion compared to infants, and infants tend to release shorter chain length and more saturated free fatty acids during digestion. Additionally, the particle sizes in the stomach of the elderly were consistently larger. This study enhances our understanding of how lipids with different degrees of unsaturation undergo digestion in diverse age groups.

Fabrication and characterization of chitosan-pectin emulsion-filled hydrogel prepared by cold-set gelation to improve bioaccessibility of lipophilic bioactive compounds

Summary: Chitosan-pectin emulsion-filled hydrogel (EFH) was developed to enhance the bioaccessibility of lipophilic bioactive compounds through intestinal delivery. The EFH, prepared without crosslinking agents, demonstrated improved mechanical strength and compactness with higher pectin concentration. It retained the emulsion at pH 2.0 and released it at pH 7.4, resulting in enhanced release of free fatty acids and improved bioaccessibility of curcumin.

Exploration of digestion-resistant immunodominant epitopes in shrimp (Penaeus vannamei) allergens

Mechanism of aroma enhancement methods in accelerating Congou black tea acidification subjected to room temperature storage

Summary: This study investigated the acidification of aroma-enhanced black tea during storage. Analysis of non-volatile substances and organic acids using UPLC-Q-TOF/MS and HPLC revealed a decrease in soluble sugars and amino acids, while an increase in organic acids such as oxalic acid, malic acid, and quinic acid. In vitro experiments further demonstrated that the acidification is a result of the decomposition of sugars and amino acids by heating, as well as the oxidation of aromatic aldehydes. Additionally, the study showed that the taste composition of tea infusion is altered, with reduced amino acids, catechins, soluble sugars, and flavonoids. This research provides a theoretical basis for improving the quality of black tea.

Immobilizing amyloglucosidase on inorganic hybrid nanoflowers to prepare time-temperature integrators for chilled pork quality monitoring
