The potential of solid-phase microextraction on polyacrylate coated fibre, with sequential or simultaneous trimethylsilyl derivatisation followed by gas chromatographic-mass spectrometric analysis, was evaluated for a rapid determination of the distribution of the phytosterols in aqueous food matrixes. Influences of different parameters (bis(trimethylsilyl)trifluoro-acetamide and sterol exposure time, sterol concentration and experimental protocol) on the recovery of sterols were investigated to determine optimum conditions which were tested for sterol extraction and analysis from orange juice. Best selectivity, sterol recovery and derivatisation yields were obtained by extraction and simultaneous derivatisation through immersion of the SPME-PA fibre in the orange juice (10 min, 65 degrees C) after headspace absorption of BSTFA (30 min, 65 degrees C) on the fibre. Nevertheless the method developed cannot be used for quantitative analysis. But the possibility to effect rapid screen of phytosterol containing in complex media have been shown. Impact of surface state on polyethylene glycol conformation confined inside a nanopore

Nicolas Arroyo, Sebastien Balme, Fabien Picaud

Summary: The study investigated the conformation of PEG inside hydrophobic and hydrophilic nanopores through molecular dynamic simulation, showing that the nanopore inner surface affects the organization of PEG and the speed of salt constituents. The pair interaction between PEG and its environment demonstrates a greater affinity for K+ cations compared to Li+ cations.

Detection of Amyloid-β Fibrils Using Track-Etched Nanopores: Effect of Geometry and Crowding

Nathan Meyer, Nicolas Arroyo, Jean-Marc Janot, Mathilde Lepoitevin, Anna Stevenson, Imad Abrao Nemeir, Veronique Perrier, Daisy Bougard, Maxime Belondrade, Didier Cot, Jeremy Bentin, Fabien Picaud, Joan Torrent, Sebastien Balme

Summary: This study investigates the impact of nanoscale geometry and molecular crowding on Aβ fibril sensing using nanopore technology. It was found that a conical nanopore functionalized with PEG 5 kDa can discriminate fibril size, while a bullet-like-shaped nanopore enhances current amplitude and dwell time. However, a nanopore crowded with PEG 20 kDa increases relative current blockade without improving fibril discrimination compared to the bullet-shaped nanopore.

Summary: The study investigates the switching of ON and OFF states of an ionic diode using PE bilayers deposited layer-by-layer, demonstrating ultrahigh ion rectification at low pH levels. The remarkable gating behavior is explained by the anion-pump-induced ion accumulation in the neutral region and depletion zone at the interface, showing the potential for achieving ultrahigh rectification in a unipolar-like configuration.

The digestion fates of lipids with different unsaturated levels in people with different age groups

Yanan Wang, Jiachen Shi, Yong-Jiang Xu, Chin-Ping Tan, Yuanfa Liu

Summary: This study investigates the variations in lipid digestion profiles among individuals of different ages using in vitro digestion models. The findings suggest that adults have a more comprehensive lipid digestion compared to infants, and infants tend to release shorter chain length and more saturated free fatty acids during digestion. Additionally, the particle sizes in the stomach of the elderly were consistently larger. This study enhances our understanding of how lipids with different degrees of unsaturation undergo digestion in diverse age groups.

Mechanism of aroma enhancement methods in accelerating Congou black tea acidification subjected to room temperature storage

Zixuan Xie, De Zhang, Junyu Zhu, Qianqian Luo, Jun Liu, Jingtao Zhou, Xiaoyong Wang, Yuqiong Chen, Zhi Yu, Dejiang Ni

Summary: This study investigated the acidification of aroma-enhanced black tea during storage. Analysis of non-volatile substances and organic acids using UPLC-Q-TOF/MS and HPLC revealed a decrease in soluble sugars and amino acids, while an increase in organic acids such as oxalic acid, malic acid, and quinic acid. In vitro experiments further demonstrated that the acidification is a result of the decomposition of sugars and amino acids by heating, as well as the oxidation of aromatic aldehydes. Additionally, the study showed that the taste composition of tea infusion is altered, with reduced amino acids, catechins, soluble sugars, and flavonoids. This research provides a theoretical basis for improving the quality of black tea.
