Summary: This study assessed the effects of sodium alginate edible coatings added with Lacticaseibacillus casei and/or fructooligosaccharides on the quality of minimally processed mango and melon. The coatings were found to delay the increase in sugar content and pH, decrease in organic acids, and improve firmness, suggesting their potential in extending the shelf life.

Summary: The study aimed to screen potential probiotic strains of Lactobacillus species for their synbiotic antibacterial action with garlic extract against Salmonella strains. L. plantarum NG6 was identified as the best probiotic lactobacilli, and the combination of garlic extract and Lactobacillus strains demonstrated synergistic antimicrobial action against Salmonella strains. This study suggests that probiotics can be combined with herbal preparations like garlic to combat gastrointestinal infections.

Summary: The probiotic strain Lactobacillus fermentum MCC2760 has shown beneficial effects in high-cholesterol diet-fed mice, including reducing serum lipids, anti-inflammatory properties, and improving gut barrier function. These findings highlight the potential of probiotic supplementation in managing hypercholesterolemia.

Summary: This study evaluated the impact of probiotics and/or prebiotics on the content of butyric acid (C4) and pyroglutamic acid (pGlu) in yogurt during the shelf-life period. The results showed that probiotic yogurt had a higher C4 content compared to traditional yogurt, and the addition of fiber increased the C4 content in probiotic yogurt. Probiotic yogurt also had the highest pGlu content. Overall, the contents of C4 and pGlu increased up to 20 days of storage and then decreased up to 30 days of storage.

Summary: The effects of different concentrations of pectic oligosaccharide (POS) on the physicochemical properties of Lactobacillus bulgaricus (L. bulgaricus) loaded-synbiotic hydrogel beads and the survival of L. bulgaricus were evaluated. The results showed that RS-POS1.2 beads exhibited higher protective effects on L. bulgaricus under simulated gastric fluid (SGF) condition and bile salts. The findings suggest that RS beads coated/filled with POS could be used for synbiotic encapsulation, protection, and delivery of probiotics.

Summary: This study investigates the prebiotic properties of inulin- and levan-based fructans and their effects on the gut microbiota. The results showed that the majority of strains isolated from probiotic products or yogurts responded positively to prebiotic treatment. Additionally, the consumption rate of fructans was influenced by their degree of polymerization and specific components.

Summary: The study found that the synbiotic combination of CPH pectin and LP significantly improved weight gain, length gains, feeding efficiency, and immune function in Litopenaeus vannamei. Shrimp fed with the synbiotics showed increased total haemocyte count, phenoloxidase activity, and respiratory bursts, as well as enhanced phagocytic activity and clearance efficiency in response to pathogen challenge. Additionally, shrimp receiving CPH pectin and/or LP treatments exhibited higher survival rates against infection and stress, indicating the immunostimulant effects of the additives.

Summary: This study focuses on the isolation and characterization of lactobacilli/bifidobacteria from human breast milk to find new probiotic candidates for food products. The breast milk strains demonstrate good adhesion to intestinal cells, antagonistic activity against food spoilage and pathogenic species, and the potential to release aroma compounds associated with sensory quality of dairy products.

Summary: The study found that L. rhamnosus can increase specific bands in the ERIC-PCR and enhance their brightness in the later stage of recovery in the mice intestine. High-throughput results confirmed that Lactobacillus and Akkermansia had different changes over time, but both showed an upward trend. Additionally, FOS had a positive effect on L. rhamnosus colonization in the gut.

Summary: Adding synbiotics to formula milk can prevent infections in infants. This study found that synbiotic feeding led to the development of a healthier gut microbiota, with lower levels of Klebsiella and higher levels of Bifidobacterium. It also increased the production of metabolites associated with immune signaling.

Summary: This study evaluated the suitability of a teff-based substrate for developing probiotic functional beverages, finding that both Lactobacillus rhamnosus GG (LGG) and Lactobacillus plantarum A6 (LA6) could grow and produce desired products in the substrate. The combination of the two evaluated lactobacilli strains reduced fermentation time, indicating the potential for producing functional probiotic beverages using teff flour as a substrate without any supplements.

Summary: The Bifidobacterium longum 5(1A) strain isolated from a healthy child's feces has probiotic properties attributed to its production of metabolites such as acetate. Comparative genomics identified unique genes possibly related to acetate production, highlighting potential benefits to host health. The strain's distinct genes suggest the use of different carbohydrate sources for greater acetate production.

Summary: The human body harbors a variety of probiotic microorganisms that can positively affect physiology, with dietary fibers playing a crucial role in preserving probiotic efficacy and creating favorable conditions for probiotic colonization. Through prebiotic and synbiotic foods, these microorganisms can promote health in humans by stimulating various health characteristics. Additionally, the symbiotic interactions between probiotic Bacilli and prebiotic substances can serve as a novel platform for developing probiotic and synbiotic foods.
