Summary: In this study, the role of amino acids in the formation of volatile substances during the drying process of Penaeus vannamei was investigated. The results showed that the type and content of volatile components significantly increased in samples with moisture contents between 30% and 5%, and basic amino acids (Arg, Lys, and His) had a strong correlation with the formation of pyrazines.

Summary: This study achieved the development of an unobtrusive and effective technology that can track fish freshness in real time and determine its edibility using a single metal oxide gas sensor. The system does not require an external reference air source and can be integrated into domestic refrigerators. Experimental results showed a strong dependence of the microbiological condition and gas-phase composition on individual samples and storage temperature.

Summary: A rapid and accurate method for detecting volatile components of corn was established using GC-IMS and GC-MS. The fingerprints of corns under different treatments were analyzed, and key flavor compounds were identified. The corns were classified into four categories, consistent with the results of sensory evaluation. Steamed, boiled, and fried corns were found to be more popular.

Summary: A novel method for analyzing NV hydrolysates using LC-MS/MS enabled by PFB derivatization followed by reaction with DABCO was developed, resulting in improved limit of detection compared to previous methods. Simple pretreatment using DABCO and filtration allowed for LC-MS/MS analysis after reaction with PFBBr. The use of PAM significantly enhanced the detection of NV hydrolysates, although PAM is not a proven antidote for NV.

Summary: This study identified and quantified volatile organic compounds (VOCs) in fermented sea bass using gas chromatography-ion mobility mass spectrometry (GC-IMS) and gas chromatography-mass spectrometry (GC-MS). Aldehydes were found to be the principal contributors to the overall flavor of fermented sea bass, and several characteristic VOCs were identified. GC-IMS was demonstrated to rapidly detect VOCs, providing a theoretical basis for studying flavor formation in fermented sea bass.

Summary: This study presents a comprehensive analysis of volatile organic compounds (VOCs) in raw Polygonum multiflorum Thunb. (PM) and its processed products. A simple and effective method based on volatile markers is proposed to determine the extent of PM processing. Analysis techniques including HS-SPME-GC-MS, HS-GC-IMS, PCA, fingerprint analysis, Cluster-KDE, and EFA are utilized to identify raw PM, analyze VOC content and distribution, and distinguish different groups of PM based on processing methods.

Summary: This study identified volatile organic compounds (VOC) in bovine cervicovaginal mucus that could be potential biomarkers of estrus and ovulation. The results may contribute to the development of a sensor device based on VOC for detecting estrus and ovulation in cattle, particularly in the dairy industry where most females are bred by artificial insemination. The VOC identified in mucus samples included 2-butanone, acetone, 2-pentanone, 4-methyl-2-pentanone, 1-(1-methylethoxy)-2-propanone, ethanol, 2-methyl-2-propanol, and 2-butanol.

Summary: The presence of chemical contaminants in food can seriously compromise food safety, creating a need for efficient analytical methods to detect these contaminants. In this study, a simple, sensitive, and fast analytical method was developed to determine thirteen natural and synthetic hormones in meat and fish products. The method showed good accuracy and sensitivity, and was able to remove potential interferences from the samples.
