Summary: This study investigates the interaction mechanism and structural changes between citrus pectin (CP) and soybean protein isolate (SPI) using fluorescence spectroscopy and Fourier infrared spectroscopy. The results demonstrate that CP strongly quenches SPI's endogenous fluorescence, leading to changes in protein structure and thermal stability. These findings provide valuable insights for the preparation of protein-pectin complexes and their application in food-grade gels and Pickering emulsions.

Summary: Postharvest granulation in citrus fruit is a severe physiological disorder that may be related to pectin metabolism. Changes in fruit quality and pectin metabolism, such as an increase in various soluble pectins and pectin methylesterase activity, were observed during granulation. Remodeling of the complex network of pectin may immobilize free water in juice sacs and induce gelation, further promoting the granulation process.

Summary: This study involved pectin hydrolyzation using subcritical water environment, establishing an empirical kinetics model and discussing its temperature and pressure dependency. The model can predict the reduction in molecular size of pectin during hydrolysis, aiding in parameter setting for practical trials and production of pectin derivatives.

Summary: Pectin recovered from lemon and grapefruit waste using hydrodynamic cavitation was used to produce eco-friendly films that inhibit the growth of Gram-negative pathogens. These films contain antimicrobial bioactive substances and can sustainably release them in an aqueous environment, effectively combating antimicrobial resistance.

Summary: In this study, a method for gel grade determination based on texture analyzer was established, which is economical and can be used on a large scale in the laboratory. The commercial application related qualities of two citrus pectins were also studied in detail. The results showed that the yields and gel grades of the pectins were in line with commodity standards, and the Changshanhuyou pectin exhibited better performance compared with commercial pectin in stabilizing acidified milk drink.

Summary: The transcriptional repressor REV-ERB-alpha plays a crucial role in regulating skeletal muscle oxidative capacity, muscle mass control, and autophagy in both skeletal muscle and brain regions. Different exercise protocols and intensities have varying effects on the expression of REV-ERB-alpha and autophagy-related genes in skeletal muscle and the hippocampus. Endurance and strength training attenuate REV-ERB-alpha transcriptional response, while interval training enhances Nr1d1 expression in the hippocampus. All exercise protocols result in the downregulation of autophagy-related genes. These findings highlight the sensitivity of REV-ERB-alpha to physical exercise stimuli and its impact on autophagy regulation.

Summary: This study investigates the modification and structural changes of citrus peel pectin (CPP) using electrochemical methods. The results showed that electrochemical modification led to a decrease in molecular weight, neutral sugar content, degree of methylation, and acetylation, while the content of galacturonic acid (GalA) increased. Additionally, hydrogels modified by the cathode region exhibited superior gel characteristics, while those modified by the anode region demonstrated effective antibacterial properties.

Summary: The present study investigated the effect of glycosylation with different sources of pectin on the properties of coconut protein isolate. The results showed that glycosylation significantly improved the solubility, surface properties, and emulsifying activity of the protein isolate. Citrus pectin and sugar beet pectin had the most significant effects.

Summary: This study investigates the potential application of pectin-based films blended with alginate and crosslinked with copper ions in agriculture. The results show that copper acts as a key crosslinking agent, improving the physical-chemical properties of the films. The inclusion of alginate enhances the binding activity of copper ions, resulting in films with optimal mechanical and protective properties. The crosslinked films also inhibit the growth of phytopathogens and are non-toxic to wheat.

Summary: Iron deficiency is a major global public health problem that can lead to anaemia if not properly addressed. Oral iron supplementation is a common intervention, but some formulations may have poor absorption and side effects. The study found that "Your" Iron Syrup was effective in correcting iron deficiency and well tolerated in a mouse model.

Summary: This study aimed to determine the effect of Tff3 deficiency on intestinal tissues in a long-term high-fat-diet model. The results showed that long-term high-fat-diet had different effects on the intestinal structure of Tff3-deficient male and female mice. In addition, sex-specific differences in duodenal morphology were observed for the first time in Tff3-deficient mice.
