Summary: Ultrasonography has been widely used in terrestrial species to collect data on internal structures and has proven to be an important tool for measuring meat yield-related phenotypes. However, its application to selective breeding of aquaculture species is relatively new, and its use in recording economically important yield traits has not yet been standardized for many species. This study aimed to standardize ultrasound image collection methods for assessing fillet yield phenotypes in Nile tilapia. The results showed that ultrasonography is an effective method for selecting broodstock candidates in selective breeding programs for Nile tilapia.

Results show that higher SV cooking temperatures and times led to greater lipid and protein oxidation, affecting flavor/taste components and sensory acceptability. The findings suggest that SV cooking, at optimal conditions, can improve the meat quality of cooked fish compared to traditional cooking methods.

Summary: Mathematical models can be used to estimate the body composition of fish without sacrificing animals. In this study, Nile tilapia body composition data were collected from 138 scientific publications, and predictive models were developed using different combinations of models and calibration methods. The results showed that model predictions are influenced by the type of model, calibration method, and amount of calibration data available. The best predictive models for Nile tilapia body composition were the allometric model and a robust hybrid model, both calibrated assuming multiplicative error.
