Summary: The impact of different woodchips on HAAs contents and quality characteristics of smoked bacon was investigated. The results showed that beech and oak smoked bacon had lower HAAs contents compared to pear and apple smoked bacon. The smoking process promoted the formation of FAA in the smoked bacon. Woodchip types had no significant influence on certain quality characteristics of the bacon.

Summary: This study investigated the impact of using different rates of chia seeds in meatballs on various factors such as water content, pH, lipid oxidation, cooking loss, and HAAs content. The results showed that chia seeds significantly affected water content, cooking loss, pH, and total HAAs content. However, no significant impact was observed on TBARS value. Cooking temperatures also had a significant effect on water content, cooking loss, and total HAAs content. The content of total HAAs increased with higher cooking temperatures.

Summary: Heterocyclic amines (HCA) are mutagenic factors in cooked meat products and pose a hazard to food safety. This study presents a new technique for detecting 2-amino-1-methyl-6-phenylimidazo [4,5-b] pyridine (PhIP) using the molecular cavities of cucurbit[7]uril (CB[7]) for guest recognition. The method involves three steps: oxidation of regenerated cellulose (RC) membrane, trapping of PhIP molecules using amine-aldehyde conjugation chemistry, and quantification of PhIP through host-guest interaction with dansyl chloride-labelled CB[7] dye.

Summary: This study aimed to assess the association between egg intake and colorectal polyp prevalence. Through a food frequency questionnaire and electronic colonoscopy, it was found that high egg consumption was significantly correlated with a higher prevalence of colorectal polyps among the Chinese population at a high risk of CRC. However, this association disappeared after further adjustment for dietary cholesterol. Replacing egg intake with total dairy products was associated with a decrease in colorectal polyp prevalence.

Summary: The development of fluorescent heterocyclic compounds bearing s-triazine and cyclotriphosphazene scaffolds for researching the structure-property relationship and high-efficiency amine sensing is still challenging. In this study, two polypodal aldehyde-based flexible organic compounds were prepared and two hydrogen-bonded organic frameworks were obtained. The fluorescence response of the compounds to aliphatic amine, especially ethylenediamine, indicated their potential application for ethylenediamine detection.

Summary: This study investigated the influence of different levels of NaCl on the HAA contents and quality characteristics of bacon. The results showed that reducing the NaCl concentration led to an increase in moisture, a(w) value, L* value, b* value, TBARS, and carbonyl content. Sensory evaluation revealed that increasing NaCl concentration significantly enhanced the saltiness of bacon. Higher NaCl concentrations resulted in a decreased total HAA content in fried bacon. Additionally, nonpolar HAA contents in bacon were higher than polar HAA contents, and salt concentration mainly affected the nonpolar HAA content.

Summary: This study evaluated the HAA levels and quality characteristics of Harbin red sausages in the northern Chinese market, finding differences between traditional and conventional sausages in terms of moisture content and hardness. Summary: The aim of this study was to evaluate the effect of Chinese quince proanthocyanidins (PAs) on the deterioration and heterocyclic aromatic amine (HAA) formation in soybean oil during deep-fat frying. The results showed that adding PAs can reduce the accumulation of oil degradation products, enhance frying performance, and decrease the formation of HAAs. PA-100 and PA-140 performed better than Tea-PP in these aspects. Adding PA-100 and PA-140 not only decreased oxidation indices and tocopherols loss, but also inhibited HAA formation by 14.82%-30.64% and 19.52%-54.24% respectively. Multivariate analysis revealed that PA-140 had a stronger effect than PA-100 in enhancing frying performance and suppressing HAA generation. This study provides evidence for using PAs from Chinese quince as stabilizers of frying oils and inhibitors of HAA formation in the food industry.

Summary: This cross-sectional study aimed to evaluate potential associations between the etiologic subtypes of ischemic stroke and blood-based proteins. The study found that stromal-cell-derived-factor 1 alpha (SDF-1a) showed significantly higher serum levels in cardioembolic stroke compared with large vessel atherosclerotic stroke, while interleukin-6 (IL-6) and macrophage migration inhibitory factor (MIF) levels were significantly lower in the small vessel stroke subtype compared to the large vessel stroke subtype.

Summary: Research on personalized nutrition has shown limited effectiveness and there are concerns about its impact on health inequality. To address these issues, a new approach called adaptive personalized nutrition advice systems (APNASs) is proposed. This approach aims to tailor personalized advice to individual needs, capacities, and receptivity in real-life food environments, encompassing broadened goals and personalized behavior change processes. Digital nutrition ecosystems enable continuous monitoring and support in food environments.

Summary: This study aimed to evaluate the trends in 5-year relative survival of patients with breast, prostate, lung, colorectal cancer, and skin melanoma in Zurich, Switzerland. The results showed a significant increase in relative survival rate between 1980 and 1989, and 2010 and 2015, likely due to improved awareness, diagnostic methods, and treatments for cancer. The high relative survival rate for stage I tumors reflects the efforts made in early detection.

Summary: This study aimed to estimate the proportion and number of incident cancer cases in Switzerland between 2015 and 2019 that were attributable to modifiable lifestyle risk factors. The results showed that 25.2% of potentially preventable cancer cases in Switzerland during this period were linked to these risk factors. The proportion and numbers were slightly larger in males than in females, and variations were observed between language regions. Tobacco smoking, excess body weight, and high alcohol consumption were the leading contributors to lifestyle-attributable cancer cases. The observed differences in leading risk factors within Switzerland and compared to other countries emphasize the need for regionally and nationally tailored cancer prevention and education strategies.
