Summary: Nudging consumers towards plant-based foods by making it the default option is an effective strategy, but simply pre-selecting a plant-based option online is not enough. Framing the plant-based option as more sustainable or tastier is also necessary to significantly increase choice.

Summary: Australian families rely more on eating foods from outside the home, leading to increased intake of energy-dense nutrient-poor foods. This study evaluated the nutritional quality of Kids' Menus in restaurants and cafes in metropolitan Perth, Western Australia. The findings showed that almost all Kids' Menus were rated as "unhealthy", with lower nutritional quality compared to the top 10 most frequented chain fast-food outlets.

Summary: The study shows that defaults can effectively increase the likelihood of purchasing flood insurance for homeowners with little to no flood-related experience. Defaults also increase flood insurance coverage for risk-averse individuals and those without previous flood experience or insurance purchase. Anticipated regret about not having insurance coverage in the event of a flood, and perceptions about the insurance cost, play a significant role in explaining the relationship between defaults and flood insurance demand.

Summary: Previous attempts to promote healthy eating using explicit techniques have not been consistently successful. This study found that using an implicit strategy, such as item placement techniques, can encourage individuals to make healthier food choices from online snack menus.

Summary: Peer-to-peer transportation platforms use menu selection to mitigate selection uncertainty. The study presents a multiple scenario approach that combines different solutions by sampling supplier selections, solving two-stage decision problems, and using a consensus algorithm to generate menus with the entire system in mind. This method outperforms benchmark policies.

Summary: The study showed that altering the choice architecture of children's meals by restructuring the menu and using optimal defaults can increase orders of healthy sides, but using optimal defaults and vice-virtue bundles can decrease french fry consumption. Further research on the use of optimal defaults on children's menus is needed.

Summary: The extremeness aversion bias is stronger when choosing portion-sizes for healthy food compared to unhealthy food. Adding an extra-large option increases the choice share of larger portion-sizes, particularly for healthy food. Moreover, people believe that larger portions of healthy food do not come with incremental health costs.

Summary: Promoting healthy lifestyles is a public priority, and designing nutritious and appealing diets is valuable. Menu Planning presents challenges, especially in finding a rich feasible region. This study developed a two-phase algorithm that quickly identifies solutions to the system and densifies the feasible region. The algorithm combines a metaheuristic with recombination to generate initial seeds and optimize the menus.

Summary: This paper derives an analytical pricing formula for spread options with credit default risk. The model utilizes discrete-time CAPM markets and Heston-Nandi GARCH processes to capture the variance dynamics of asset returns. The study proposes a model that decomposes the risk of all assets into idiosyncratic and systematic parts, considering the impacts of market fluctuations on default intensity. It also provides a theoretical framework for discrete-time credit risk modeling in reduced-form. The proposed model incorporates credit risk and systematic factors into an affine-GARCH valuation model and uses Fourier transform techniques to obtain analytic spread option prices. The empirical results and numerical analysis for different model parameters are displayed.

Summary: This study finds that combining direct load control with a pricing menu can avoid rebound peaks in load-shifting. The majority of younger customers are willing to choose a pricing model with direct load control, while the remaining customers may opt for a time-of-use tariff with manual load control or not participate in load-shifting incentives.

Summary: This study found that even though the majority of customers did not actively choose to opt-in to time-varying pricing, they still reduced electricity consumption in response to higher prices, demonstrating a default effect. Observing this follow-on behavior allowed the researchers to assess competing explanations for the default effect.

Summary: This paper introduces a Variance Gamma (VG) model to improve the valuation methods of mortgage in the housing market, providing closed-form solutions for pricing mortgage default and prepayment options. By analyzing risks through simulations, the VG model captures the systematic and systemic risks of default and prepayment options' prices.

Summary: With the rapid development of sharing economy, manufacturers have started establishing direct sharing channels in addition to existing distribution channels. This paper examines when and why a manufacturer should establish a direct sharing channel. The findings suggest that the manufacturer may not always benefit from establishing a new sharing channel, and it depends on the operating cost. However, if the operating cost falls within a certain interval, the manufacturer's sharing channel can increase the overall supply chain profit but may decrease the retailer's profit.

Summary: This study found that dietary trajectories in preschool children are associated with obesity and early childhood caries, with high discretionary food intake and continued breastfeeding linked to health issues. Highest socioeconomic disadvantage was identified as a significant determinant for both overweight and obesity, as well as ECC. Targeted health promotion interventions are recommended to prevent the occurrence of these prevalent conditions in preschool children.

Summary: Restrictive eating is a central feature of anorexia nervosa (AN) and other eating disorders. This study examined the behavioral and neural mechanisms of restrictive eating among individuals with and without eating disorders. The findings showed that healthy individuals tended to choose high-fat foods, while patients with AN focused more on the healthiness of the food. Dorsal striatal activation associated with food choice was most pronounced among individuals with AN, and it was significantly associated with selecting fewer high-fat choices and lower caloric intake.
