Summary: In this study, L-ascorbate was incorporated into layered yttrium hydroxide, resulting in a partially interdigitated bilayer structure with high loading capacity and density of L-ascorbate. This arrangement enhanced the durability of L-ascorbate against light and oxidation. The release of L-ascorbate could be described by a first-order model in a phosphate buffer solution. Furthermore, when yttrium hydroxide was doped with Tb3+ activator, the absorbed UV light energy of L-ascorbate was efficiently transferred to Tb3+, resulting in strong green emission.

Summary: Autochthonous strains of Lacticaseibacillus paracasei and Lacticaseibacillus casei were screened for their pro-technological, functional, and sensory properties for fermenting milk for ice cream production. Ice cream fermented with L. casei F14 received the highest sensory scores. Fermented ice cream, with or without hydroxytyrosol, exhibited antiradical and anti-inflammatory features in Caco-2 cell culture. Fermentation with L. casei F14 played a key role, while the addition of hydroxytyrosol further enhanced the antiradical activity. Dietary fiber did not show a protective effect on Caco-2 cells.

Summary: A high-performance liquid chromatography with electrochemical detection (HPLC-ECD) method was developed and validated for measuring vitamin C (VC) levels in honey samples. The method showed higher sensitivity, simpler operation processes, and faster detection compared to common methods. The validated HPLC-ECD method was successfully used to evaluate VC levels in different varieties of honey samples, fruit, and biological samples.

Summary: A new analytical approach combining ultrasound-assisted emulsification, photoreaction with methylene blue, and UV-vis spectrophotometry has been developed to determine l-ascorbic acid (AA) in cosmetic samples. The emulsification process produces a transparent solution that is easily measured by UV-vis spectrophotometry. The reaction between the emulsified sample and methylene blue is irradiated with a tungsten lamp for 5 minutes, resulting in a decrease in absorbance intensity as the AA concentration increases. The proposed method has high sensitivity, with limits of detection and quantification of 0.04 μg mL(-1) and 0.15 μg mL(-1), respectively.

Summary: In this study, a novel liposomal system called lipo-oil-some (LOS) was developed to enhance the stability and skin absorption of vitamin C. The optimized LOS exhibited a multi-layered sphere shape with a size of 981 nm, a zeta potential of -58 mV, and a vitamin C encapsulation efficiency of 35%. Encapsulation of vitamin C in the LOS system significantly improved its photostability and demonstrated comparable skin permeation and accumulation to smaller conventional liposomes in a porcine skin model.

Summary: A simple, sensitive, accurate, and inexpensive UV-reversed-phase high-performance liquid chromatographic method was developed for determining the content of ascorbic acid in tablets. The method utilized specific mobile phase and detection wavelength, and the variables were optimized to achieve the best conditions. The results demonstrated that the proposed method had excellent capability in determining ascorbic acid in tablet formulations and complied with regulatory guidelines.

Summary: This study evaluated the degradation kinetics of carotenoids in a pumpkin juice concentrate colored beverage during storage at different temperatures and light conditions. The results showed that both temperature and light intensity accelerated carotenoid losses, with degradation mainly caused by oxidative reactions. The degradation followed an Arrhenius temperature-dependency, and strategies such as minimizing oxygen exposure, using antioxidants, and selecting proper light sources can optimize pigment retention in carotenoid-colored beverages during storage.

Summary: This study evaluated the impact of air atmosphere packaging and modified atmosphere packaging on the quality and nutritional compounds of stored dried mistletoe leaves. It was found that mistletoe leaves packaged with modified atmosphere had improved nutritional qualities compared to leaves packaged with air atmosphere. Water activity values of all samples increased during storage. The total phenolic content and antioxidant activity decreased in stored samples, with the highest loss observed at room temperature. Overall, the modified atmosphere packaging and low-temperature storage provided better retention of bioactive compounds.

Summary: Riboflavin conjugated silver nanoparticles (RF-AgNPs) were synthesized and characterized. The RF-AgNPs exhibited a surface plasmon resonance (SPR) peak at 422 nm and an intense absorption peak at 2920 cm(-1). AFM studies showed that the RF-AgNPs were spherical and polydisperse. The RF-conjugated AgNPs showed no adverse effects on normal and cancerous cells. RF-AgNPs aggregate at acidic pH and their formation follows a biphasic first-order reaction.
