Summary: Glucansucrase was isolated from Leuconostoc pseudomesenteroides and showed optimal activity at pH 5.5 and 30 degrees C. Ca2+ significantly enhanced enzyme activity. The synthesized exopolysaccharide had a molecular weight of 3.083 x 10(6) Da and mainly consisted of α-(1->6)-linked D-glucopyranose units (97.3%) with α-(1->3) branched chains accounting for 2.7%. Scanning electron microscopy and atomic force microscopy revealed the smooth and flaky surface morphology of dextran, with a chain-like microstructure and irregular protuberances in aqueous solution. Dextran exhibited good thermal stability, water holding capacity, solubility, emulsifying ability, and antioxidant activity, making it promising in the food, biomedicine, and medicine industries.

Summary: In this study, Leuconostoc pseudomesenteroides G29 was found to produce two types of exopolysaccharides from sucrose, soluble and insoluble alpha-glucans. The production of soluble alpha-glucan was increased by regulating pH, leading to potential applications of the insoluble alpha-1,3-glucan as biomaterials and/or biochemicals. Analysis of the structures of the exopolysaccharides provides insights into their production by L. pseudomesenteroides.

Summary: Selected lactic acid bacteria starters produced a significant amount of dextran in brewers' spent grain while forming oligosaccharides with different degrees of polymerization. Putative dextransucrase genes identified in the starters showed a typical induction profile during fermentation. The formation of dextran and oligosaccharides in BSG by lactic acid bacteria can be adjusted to achieve specific technological properties of this raw material, aiding its reintegration into the food chain.

Summary: Two selenized polysaccharides (PSLP-1 and PSLP-2) were synthesized from native polysaccharide obtained from Lonicera caerulea L. fruits. The selenium contents of PSLP-1 and PSLP-2 were found to be 228 +/- 24 and 353 +/- 36 mu g/g, respectively. Despite changes in molar ratios, the main chain structure and glycosidic bonds of the polysaccharides remained intact after selenization. The selenized polysaccharides showed improved antioxidant activities but weakened abilities in bile acid-binding and inhibition of acetylcholinesterase (AChE).

Summary: The study reported the synthesis of a dextran coated iron oxide nanoparticles thin layer on glass substrate. Various analytical techniques were used to analyze the surface morphology and chemical composition of the DIO-NPs thin layer. The results showed a continuous and homogeneous layer with the presence of Fe-CO metal carbonyl vibration bonds indicating the linkage between iron oxide nanoparticles and dextran. Furthermore, cytotoxicity assays demonstrated that the DIO-NPs layers did not exhibit toxic effects towards HepG2 cells.

Summary: In this study, an EPS produced by Weissella confusa H2 was purified and its structure characteristics and biological activities were analyzed. The EPS was found to be a linear homopolysaccharide composed mainly of glucose with alpha-(1 -* 6) glycosidic bonds and a few alpha-(1 -* 3) branches. The purified EPS exhibited good solubility, water-holding capacity, thermal stability, rheological property, and heavy metal chelating activity, making it a potential additive in the food and environmental protection fields.

Summary: In this study, a reusable biobased composite hydrogel was successfully synthesized and used for the removal of Tl(I) from aqueous solutions. The hydrogel exhibited high adsorption capacity and thermal stability, and the adsorption process was found to be thermodynamically spontaneous. The results demonstrated that the hydrogel can be reused multiple times without significant loss of its adsorption capacity.

Summary: In this study, a unique 3D bead structure of adsorbent, composed of bacterial cellulose microfilaments reinforced chitosan adorned with melamine 2D plates, was synthesized for anionic dye removal. The characteristics and optimal conditions of the adsorbent were assessed and analyzed.

Summary: The potential of multi-layer nanoemulsions for improving the cellular uptake, antioxidant activity, and in vitro bioaccessibility of alpha-tocopherol was examined. The results showed that the multi-layer nanoemulsions significantly enhanced the cellular uptake and antioxidant activity of alpha-tocopherol compared to free coumarin 6. Furthermore, the use of chitosan and dextran sulfate as wall materials in the multi-layer nanoemulsions led to even higher cellular uptake, in vitro bioaccessibility, and antioxidant activity of alpha-tocopherol.
