Summary: The importance of what, how and why people eat has been recognized for human health, but it has recently been acknowledged as a crucial aspect of climate change and its impact on planetary health. The crises of global climate change and diet-related health issues are connected to food systems, food environments and consumer food choices. Understanding individual food choice is essential for transforming food systems to achieve both human and planetary health goals. There is limited knowledge about the relationship between food choice and climate change. To clarify potential courses of action, it is proposed that individual food choice affects climate change through three key mechanisms: influencing food supply and demand, impacting food waste, and serving as a symbolic expression of concern for human and planetary health. Understanding what, how and why people eat, as well as the mechanisms by which these choices affect climate change, is crucial for designing actions that protect both human and planetary health.
