Pork and pork products are recognized as vehicles of Salmonella Typhimurium (S. Typhimurium) infection in humans. Galacto-oligosaccharides (GOS) and seaweed-derived polysaccharides (seaweed extract [SWE]) have been shown to exhibit antimicrobial and prebiotic activity. The aim of the present study was to assess the ability of GOS and SWE supplementation to reduce S. Typhimurium infection in vivo. Grower-finisher pigs (n = 10/treatment) were randomly assigned to 3 dietary treatments: 1) basal, 2) basal + 2.5 g GOS/kg feed, and 3) basal + SWE (containing 180 mg laminarin/kg feed and 340 mg fucoidan/kg feed). Following an 11-d dietary adaptation period, pigs were orally challenged with 108 cfu/mL S. Typhimurium. Pigs remained on the diets for a further 17 d and were then sacrificed for sample collection. The SWE supplementation reduced (P < 0.05) S. Typhimurium numbers in fecal samples collected 7 d after challenge. In addition, SWE reduced (P < 0.05) S. Typhimurium numbers in digesta from the cecum and colon. Expression levels of IL-10 and MUC2 in ileal tissue were increased (P < 0.05) for the GOS treatment group. The SWE treatment group had reduced (P < 0.05) expression levels of IL-22 in colonic tissue. The IL-6 and TNF-alpha expression levels in the colon were reduced (P < 0.05) for both GOS and SWE treatments. In conclusion, addition of SWE reduced fecal and intestinal S. Typhimurium numbers after S. Typhimurium challenge compared with the basal diet. The proinflammatory response after S. Typhimurium was reduced in grower-finisher pigs through supplementation of GOS and SWE.

Microbiological assessment of liquid feed for finisher pigs on commercial pig units

F. M. O'Meara, G. E. Gardiner, D. Clarke, W. Cummins, J. V. O'Doherty, P. G. Lawlor

Summary: This study investigates the microbiological and nutritional quality of liquid finisher pig feed on commercial production units and finds that uncontrolled fermentation negatively affects the nutritional quality. The study highlights the need for suitable control strategies to manage fermentation in liquid pig feed on commercial units.

Molecular characteristics and antioxidant activity of laminarin extracted from the seaweed species Laminaria hyperborea, using hydrothermal-assisted extraction and a multi-step purification procedure

Gaurav Rajauria, Rajeev Ravindran, Marco Garcia-Vaquero, Dilip K. Rai, Torres Sweeney, John O'Doherty

Summary: This study aimed to determine the effect of hydrothermal-assisted extraction and a multi-step purification process on the molecular characteristics and antioxidant activity of laminarin extracts from brown seaweed. The optimized extraction conditions were found to be effective in recovering biologically active laminarin, while the purification process reduced the antioxidant activity compared to crude extract.

Summary: Supplementation with laminarin and fucoidan enriched seaweed extracts did not have significant effects on animal performance, but had positive influences on intestinal health through alterations in the gastrointestinal microbiome and increased butyrate production.

Seasonal Variation of the Proximate Composition, Mineral Content, Fatty Acid Profiles and Other Phytochemical Constituents of Selected Brown Macroalgae

Marco Garcia-Vaquero, Gaurav Rajauria, Marta Miranda, Torres Sweeney, Marta Lopez-Alonso, John O'Doherty

Summary: The study aimed to determine the chemical, phytochemical, fatty acid and mineral profiles of three commercially relevant brown macroalgae collected off the west coast of Ireland over two years. Results showed significant variations in these profiles depending on the macroalgal species, season and year of collection. The findings indicate that protein content in the macroalgae was negatively correlated with carbohydrate content, with protein levels peaking in winter and/or spring and decreasing in summer and/or autumn.

The effects of mushroom powder and vitamin D-2-enriched mushroom powder supplementation on the growth performance and health of newly weaned pigs

Eadaoin Conway, Torres Sweeney, Alison Dowley, Shane Maher, Gaurav Rajauria, Supriya Yadav, Jude Wilson, William Gabrielli, John V. O'Doherty

Summary: The study found that supplementing weaned pigs with mushroom powder and vitamin D-2 enriched mushroom powder had no significant impact on growth performance and fecal scores within 35 days post-weaning. However, supplementation of mushroom powder and MPD2 resulted in reduced feed intake, while zinc oxide supplementation increased growth rate and feed intake.

Prediction of Trained Panel Sensory Scores for Beef with Non-Invasive Raman Spectroscopy

Jamie Cafferky, Raquel Cama-Moncunill, Torres Sweeney, Paul Allen, Andrew Cromie, Ruth M. Hamill

Summary: The objective of this study was to investigate the application of Raman spectroscopy in predicting sensory quality in beef. The study found that Raman spectra can accurately predict sensory traits such as tenderness, metallic flavor, fatty after-effect, and juiciness. Mathematical spectral pre-treatments improve the predictive accuracy of the models. This study provides a non-destructive method to calibrate valuable quality traits in beef using Raman spectra collected at a specific time point compatible with meat management systems.

Selenium-Enriched Mushroom Powder Enhances Intestinal Health and Growth Performance in the Absence of Zinc Oxide in Post-Weaned Pig Diets

Summary: This study aimed to investigate the effects of different selenium inclusion levels on post-weaning growth performance, intestinal health, and antioxidant capacity in pigs. The results showed that supplementation with 0.3 SeMP had positive effects on faecal scores and pig performance in Period 1, while the addition of 0.3 ppm selenite to 0.3 SeMP (0.6 SeMP/Sel) in Period 2 led to enhanced pig performance and gastrointestinal health.

Identification of circRNAs Associated with Adipogenesis Based on RNA-Seq Data in Pigs

Qiaowei Li, Liyuan Wang, Kai Xing, Yalan Yang, Adeyinka Abiola Adetula, Yuwen Liu, Guoqiang Yi, Hongfu Zhang, Torres Sweeney, Zhonglin Tang

Summary: This study compared the spatio-temporal expression pattern of circRNAs between different adipose deposition breeds in pigs. It identified circRNAs involved in the regulation of adipogenesis and analyzed the interaction between circRNAs and miRNAs. The study revealed important circRNAs and their target genes enriched in fatty acid biosynthesis, fatty acid metabolism, and Wnt/TGF-beta signaling pathways. These findings provide valuable insights into the molecular mechanism of circRNAs in pig adipose biology.

The Effect of Prebiotic Supplements on the Gastrointestinal Microbiota and Associated Health Parameters in Pigs

Dillon P. Kiernan, John V. O'Doherty, Torres Sweeney

Summary: Establishing a balanced and diverse microbiota in the gastrointestinal tract (GIT) is crucial for optimizing health and performance in pigs throughout the production cycle. The post-weaning period is a critical phase associated with dysbiosis, intestinal dysfunction, and poor performance. Prebiotics, as a class of bioactive compounds, can be utilized by beneficial microbes in the GIT to enhance their proliferation and production of health-promoting metabolites, while suppressing the growth of pathogenic bacteria. There are various types of prebiotics, including carbohydrates such as non-digestible oligosaccharides, beta-glucans, resistant starch, and inulin. This review aims to characterize different prebiotics, discuss the concept of stimbiotics, and outline how supplementation of prebiotics at different stages of pig development and production can modulate the GIT microbiota and improve animal health and performance.
