Summary: The effect of high pressure processing on the microbiological quality and biogenic amines content in skin-packed beef during refrigerated storage was evaluated. The higher the applied pressure, the slower bacteria growth in beef was observed. High pressure processing significantly inhibited the formation of cadaverine, putrescine, and tyramine in beef, and the BAI value and the level of CAD and PUT were the most useful indicators of beef quality deterioration.

Summary: Food spoilage leads to waste and diseases. A miniature sensor based on poly(styrene-co-maleic anhydride) was developed for on-demand spoilage analysis via mobile phones. The sensor was embedded in packaged chicken and beef to monitor spoilage. This low-cost, miniature wireless sensor can help consumers and suppliers detect spoilage of protein-rich foods and prevent food waste and food-borne diseases.

Summary: In order to ensure food safety and reduce food waste, the food industry and consumers seek a continuous and non-destructive method to determine food spoilage. This study presents a porphyrin-based sensor foil for the detection of biogenic amines. The foil changes color and fluorescence spectrum when exposed to amines, allowing for the monitoring of fish degradation. We believe that this sensor can be integrated into smart food packaging to track the freshness of food during transportation and storage.

The incorporation of anthocyanins into polylactic acid has led to the development of a novel intelligent freshness indicator capable of differentiating between fresh, medium fresh, and spoiled proteinous foods. The indicator's ability to accurately respond to the spoilage of various foods is crucial for commercialization in the industry.

Summary: This paper develops a light-activated sensor, PMI-B, which can selectively detect biogenic amines in solution and membranes, especially spermine. The detection of breast cancer and other female cancer and lesion patients can be effectively classified based on the ratio differences of certain parameters. Compared with established tumor markers, the A(741)/A(516) value of PMI-B shows potential as a specific malignant tumor marker for breast cancer patients.

Summary: In this study, a new intelligent pH-sensitive colorimetric label was developed by immobilizing Ixiolirion tataricum anthocyanins into biocellulose film. This label was used to monitor the freshness and spoilage of shrimp during storage at 4 degrees C. The label showed a distinct color change over a pH range of 4-12 and correlated with the changes in pH, TVB-N, TPC, and biogenic amines levels in the shrimp samples. This research suggests that the ITA-based pH-sensitive label has great potential for intelligent packaging of seafood.

Summary: The objective of this study was to determine the influence of hempseed meal (HSM) on goat meat characteristics. Results showed that HSM did not alter carcass characteristics, microbial spoilage, cook loss, or TBARS. However, an increase in HSM concentration in the diet resulted in a decrease in objective tenderness measurements of goat meat.

Summary: During storage, the total viable counts of vacuum packaged low processed rainbow trout gradually increased, while coliform bacteria disappeared. The concentration of biogenic amines and the biogenic amine index increased over time, with the highest concentration of inosine monophosphate. The G value was found to be a more suitable indicator for assessing the quality of the gravad.

Summary: This study investigates the variations in lipid digestion profiles among individuals of different ages using in vitro digestion models. The findings suggest that adults have a more comprehensive lipid digestion compared to infants, and infants tend to release shorter chain length and more saturated free fatty acids during digestion. Additionally, the particle sizes in the stomach of the elderly were consistently larger. This study enhances our understanding of how lipids with different degrees of unsaturation undergo digestion in diverse age groups.

Summary: This study investigated the acidification of aroma-enhanced black tea during storage. Analysis of non-volatile substances and organic acids using UPLC-Q-TOF/MS and HPLC revealed a decrease in soluble sugars and amino acids, while an increase in organic acids such as oxalic acid, malic acid, and quinic acid. In vitro experiments further demonstrated that the acidification is a result of the decomposition of sugars and amino acids by heating, as well as the oxidation of aromatic aldehydes. Additionally, the study showed that the taste composition of tea infusion is altered, with reduced amino acids, catechins, soluble sugars, and flavonoids. This research provides a theoretical basis for improving the quality of black tea.
