Summary: In this study, non-fermented probiotic grape juices were produced using two different strains of lactic acid bacteria, which showed maintained probiotic activity throughout the monitored storage time. The physicochemical properties of the grape juices changed during storage, but they still remained suitable for non-dairy product users. One strain of lactic acid bacteria, in particular, maintained the color properties of the grape juice during storage.

Summary: Probiotic cellulose, a biomaterial free of antibiotics, consists of dense films of cellulose nanofibers invaded by live probiotics. It exhibits excellent antibacterial activity against Staphylococcus aureus and Pseudomonas aeruginosa, as well as methicillin-resistant Staphylococcus aureus. The synthesis of probiotic cellulose is cost-effective and safer compared to traditional methods for obtaining bacterial cellulose.
