This review provides a comprehensive understanding of the bidirectional relationship between polyphenols and the gut microbiome, including the impact of polyphenols on microorganisms and the biotransformation of polyphenols by bacteria. The interactions between polyphenols and gut microbiota play a crucial role in human health.
This review presents the comprehensive knowledge about the bidirectional relationship between polyphenols and the gut microbiome. The first part is related to polyphenols' impacts on various microorganisms, especially bacteria, and their influence on intestinal pathogens. The research data on the mechanisms of polyphenol action were collected together and organized. The impact of various polyphenols groups on intestinal bacteria both on the whole microbiota and on particular species, including probiotics, are presented. Moreover, the impact of polyphenols present in food (bound to the matrix) was compared with the purified polyphenols (such as in dietary supplements) as well as polyphenols in the form of derivatives (such as glycosides) with those in the form of aglycones. The second part of the paper discusses in detail the mechanisms (pathways) and the role of bacterial biotransformation of the most important groups of polyphenols, including the production of bioactive metabolites with a significant impact on the human organism (both positive and negative).

How keeving determines oenological parameters and concentration of volatile compounds in ciders?

The Acrylamide Degradation by Probiotic Strain Lactobacillus acidophilus LA-5

The Utilisation of Acrylamide by Selected Microorganisms Used for Fermentation of Food

Summary: This study found that acrylamide can stimulate the growth of Lactic Acid Bacteria and Latin Lactic Yeast, and suggested that Lactobacillus acidophilus LA-5 can utilize acrylamide as a source of carbon and nitrogen. It also indicated that certain strains of bacteria present in fermented milk products may have the potential to diminish acrylamide concentration, hence preventing its harmful impact on the human body and intestinal microbiota.

Antimicrobial Compounds in Food Packaging

Summary: This review presents current knowledge on antimicrobial agents that are already used in the food packaging industry, discussing innovative ways of food packaging, and focusing on one group of bioactive components, namely antimicrobial agents. The main antimicrobial agent groups used in packaging materials to extend the shelf life of food, as well as the further development of perspectives and setting of new research directions were described.

Summary: The aim of this study was to evaluate the anti-atherosclerotic effect of pomegranate seed oil containing CLnA compared to LnA and CLA in apoE/LDLR-/- mice. The results showed that CLnA improved the lipid profile and affected lipid metabolism gene expression, but had no impact on the development of atherosclerotic plaque in these mice.

Summary: This article discusses the use of different types of wood in the production of wines, beers, and flavored vodkas to improve their quality parameters. The changes that occur in wood during the toasting process and the compounds derived from wood that shape the aroma, taste, and color of alcoholic beverages are described. The influence of wood on the quality of alcoholic beverages, particularly in wine, beer, whisky, and brandy, is emphasized. Furthermore, innovative techniques using wood to enhance the qualitative features of alcoholic beverages are presented.

Possible Side Effects of Polyphenols and Their Interactions with Medicines

Summary: Polyphenols are important components of plant-derived food that have a wide range of beneficial effects on human health. However, they can also have harmful effects, such as blocking iron uptake, inhibiting digestive enzymes, disrupting intestinal microbiota, interacting with drugs, and affecting hormonal balance. Public awareness needs to be raised on the potential side effects of polyphenol supplementation, especially for vulnerable populations.
