Summary: Deep eutectic solvents (DESs), a green alternative to organic solvents, have high viscosity that limits their utilization. In this study, pure DESs based on choline chloride (ChCl) mixed with diethylene glycol (DEG), triethylene glycol (TEG), polyethylene glycol 200 (PEG 200), and ChCl/TEG/water mixtures were investigated. The effects of temperature on their properties and structures were studied. The results showed that temperature had slight influence on the structures of both DESs and DES/water systems, but significantly increased their transport properties.

Summary: This paper introduces the potential of deep eutectic solvents (DES) as plasticizers for chitosan film in food packaging. Films based on chitosan and DES consisting of choline chloride (ChCl) and organic acids were studied for their structural, mechanical, thermal, contact angle, optical, antioxidant, and antibacterial properties. The addition of ChCl and acetylsalicylic acid resulted in films with optimal mechanical characteristics, reduced water contact angles, decreased decomposition temperature, strong UV shielding, and antioxidant properties. Films containing ChCl, acetylsalicylic acid, malonic acid, and lactic acid showed excellent antibacterial properties against Escherichia coli and Staphylococcus aureus.

Summary: A supramolecular biofilm crosslinked by hydrogen bond between natural deep eutectic solvent and chitosan was studied and prepared successfully to reduce bacterial infection. It exhibited high killing rates against Staphylococcus aureus and Escherichia coli, and can be degraded in soil and water, showing excellent biocompatibility and biodegradability. Moreover, it has UV barrier property, which can effectively prevent UV-induced secondary injury to wounds. Overall, the NADES-CS supramolecular biofilm has great potential for medical applications and lays the foundation for sustainable polysaccharide materials.

Summary: The present study aimed to investigate the structural-functional relationships between whey protein isolate (WPI) and natural deep eutectic solvents (NADES) dispersion. Different NADES, such as acid-based and sugar-based, exhibited different effects on the properties of WPI dispersion. Acid-based NADES led to low pH, surface tension, thermal stability, high conductivity, and foam stability, while sugar-based NADES showed opposite behaviors. The interaction between WPI and NADES was observed, and sugar-based dispersion demonstrated higher peak force and energy compared to acid-based dispersion. Additionally, the dispersion exhibited both Newtonian and non-Newtonian flow behavior.

Summary: The encapsulation of curcumin in pH-responsive ALG-CHI hydrogel beads using deep eutectic solvents (DES) was successfully achieved, showing great promise as an encapsulation strategy for poorly water-soluble compounds for intestinal-targeted delivery of curcumin. The vacuum-dried beads exhibited superior performance for drug release control, indicating their suitability for intestinal drug delivery applications.

Summary: The high molecular weight of chitin poses challenges for its extraction due to solubility issues, while chitosan faces limitations in industrialization due to poor mechanical stability and plasticity of its films caused by incompatible solvent interactions. Deep eutectic solvents (DESs) offer a solution for these challenges, and show potential in various chitosan and chitin productions.

Summary: Research on novel deep eutectic solvent (DES) systems and their utilization is gaining attention. This study describes new eutectic mixtures composed of cyano-based derivatives and levulinic acid. The systems were characterized using various spectroscopic and computational techniques. The structures were determined by the formation of hydrogen bonds between the cyano site in the derivatives and the hydroxyl hydrogen bond donor site in levulinic acid. These solvents can have diverse applications in chemistry and biochemistry.

Summary: Anthocyanins are extracted using alternative solvents such as ionic liquids, deep eutectic solvents, and natural deep eutectic solvents, which are more environmentally friendly and efficient compared to conventional solvents. Acid-based deep eutectic solvents with 20-30% water content showed the highest anthocyanin extraction yield. Ultrasonic-assisted extraction was the most common and efficient method, and DES-based extracts exhibited the highest stability and antioxidant activity. Fruits and their by-products are the most commonly used samples, while cereal and legumes are less explored.

Summary: This study investigated the adsorption properties of malachite green dye on two types of chitosan deep eutectic solvent adsorbents. The optimal pH and adsorption capacity under different factors were determined, while various characterization techniques were used to reveal the surface properties, crystallinity, pore sizes, and magnetic characteristics of the adsorbents. The results showed good fitting with the Langmuir model and the best description of kinetic behavior by the pseudo-second-order kinetic model for both adsorbents.
