Microbiological purity control of food products is of great importance in the food industry. Contaminated food is often characterized by a deteriorated taste, smell, and appearance, and when consumed, it can pose a threat to human health and life. Also, contamination incurs huge financial losses to the food industry. Different methods are used for identification of the microorganisms isolated from food, which are based on phenotypic, immunologic, genetic, and spectroscopic techniques. Unfortunately, these methods have the following disadvantages: laborious, time-consuming, requiring a well-trained spectrometer operator with specialist knowledge, or very accurate, but complicated, and extremely expensive. In recent years, matrix-assisted laser desorption/ionization-time of flight mass spectrometry (MALDI-TOF MS) has been gaining increasing importance in the field of food microbiology. Unlike other techniques used for microorganisms identification, MALDI-TOF MS is more rapid, accurate and cost-efficient, and easy to perform. Thus, this method can be applied in the food industry to quickly and accurately identify microorganisms, which is crucial for controlling the quality of food products. The present review aims to discuss the selected applications of MALDI-TOF MS in food microbiology. It mainly focuses on the characteristics of this method and its potential use in the identification and typing of microorganisms including filamentous fungi, yeasts, and bacteria in fermented beverages (beer and wine), honey, dairy products like yogurt and pasteurized milk, pork, and seafood.

Summary: The widespread use of antibiotics has led to the development of multidrug resistance in many bacterial strains, including Salmonella. Salmonella, a common pathogen causing intoxication from contaminated food and water, is pharmacologically treated with antibiotics like fluoroquinolones, ceftriaxone, and azithromycin. Understanding the molecular mechanisms behind antibiotic resistance in Salmonella is essential for choosing effective treatment and addressing the significant global concern of increasing antibiotic resistance.

Summary: Lactic acid bacteria in the natural environment encounter multiple stressors, but they are not subjected to high hydrostatic pressure (HHP), which makes their response to HHP more difficult to identify. DnaK, ctsR, and hrcA have been found to be essential regulators in the LAB cellular response to HHP, serving as useful markers for this purpose.

Genomic Analysis and In Vitro Investigation of the Hop Resistance Phenotype of Two Novel Loigolactobacillus backii Strains, Isolated from Spoiled Beer

Summary: This study presents the annotated whole genome sequence of two strains of Loigolactobacillus backii, a beer-spoiling bacteria with high hop tolerance. The genetic basis and adaptation of the strains in the brewery environment were studied, revealing their ability to survive and grow in the presence of hop compounds. The findings provide insights into the mechanisms behind the tolerance of Lg. backii to extreme conditions in the brewery.

Depiction of the In Vitro and Genomic Basis of Resistance to Hop and High Hydrostatic Pressure of Lactiplantibacillus plantarum Isolated from Spoiled Beer

Summary: Among beer-spoiling microorganisms, dominant species include Lactobacillus, Leuconostoc, Oenococcus, and Pediococcus. High hydrostatic pressure can eliminate these microorganisms while preserving desired beer properties. This study analyzed the resistance of a beer-spoiling Lactiplantibacillus plantarum strain to hop and high hydrostatic pressure, and confirmed its genome characteristics through sequencing. The findings suggest the strain's growth is affected by beer concentration and it possesses genes for stress resistance and adaptation to the brewing environment.

Impact of high hydrostatic pressure on the single nucleotide polymorphism of stress-related dnaK, hrcA, and ctsR in the Lactobacillus strains

Summary: This study evaluated the impact of high hydrostatic pressure (HHP) on stress-response mechanism-related genes in lactic acid bacteria (LAB). The findings showed changes in gene expression after HHP treatment, but no correlation with single nucleotide polymorphisms (SNPs). The number and diversity of mutations varied among different genes. Further research is needed to understand the general mechanisms and changes in membranes' composition, proteome, and gene expression patterns.
