Summary: The filterability of barley malt is a critical quality parameter in beer brewing. Two different mashing processes were studied for their effects on the filterability of three barley malts. A downward mashing process was found to be able to predict the filterability of malt and the degradation of beta-glucan, solubilization of PAX and HMWN during malting were critical for ensuring malt quality.

Summary: This study investigated the influence of food polysaccharides from different sources on microstructural and rheological properties of oil-in-water emulsions. The polysaccharides used were beta-glucan from oat, arabinoxylan from wheat, and pectin from apple. All polysaccharides increased the viscosity of emulsions and reduced lipid digestion rate and extent, with pectin showing the greatest effect.

Summary: This study investigated the impact of arabinoxylan and cellulose/starch stearic acid ester composite coatings on the quality and storage life of guavas. The results showed that these coatings significantly reduced the respiratory and ethylene production rates, weight loss, color degradation, fruit softening, enzymatic activity, and content of phenolics and flavonoids. Therefore, these antimicrobial coatings have the potential to extend the shelf life and maintain the quality of guavas during storage.

Summary: Oleogel-based emulsion was prepared using sunflower oil, beta-Sitosterol, and Stearic acid mixture. The firmness of the emulsion was affected by water content and oleogelator concentration, and diffraction patterns and thermal properties varied with water content. Furthermore, the emulsion showed positive storage and loss moduli slopes with increasing frequency. The study also found that the oleogel-based emulsion had a good release rate of beta-carotene.

Summary: The quality of apple skin is affected by greasiness, which varies among different apple varieties. This study compared the untargeted metabolites and fatty acids in the skin and flesh of 'Hongro' and 'Fuji' apples, which had different levels of greasiness, during the transition from low temperature to room temperature storage. Ethylene production and fatty acid composition differed between the two varieties, and excessive ethylene production in 'Hongro' during room-temperature storage was related to the development of greasiness. The primary wax components of greasy 'Hongro' were nonacosane and nonacosan-10-ol. Factors triggering greasiness in 'Hongro' may have genetic influences from the paternal parent used during breeding.

Summary: The quality characteristics of chhana are varied due to the milk composition and milking season. Water holding phenomena and denatured protein association affect the macroscale properties and molecular bonding patterns. Increasing proportion of buffalo milk in mixed milk leads to higher yield, lightness, textural firmness, and elastic modulus of chhana due to higher total solids and less moisture content. Total protein, fat, water, and their interaction significantly affect the rheological and textural properties of chhana samples.

Summary: This study aimed to understand the microbial growth dynamics in Chhana (Indian cottage cheese) by using three different primary models (Logistic, Gompertz, and Barayni) to develop secondary models and relate them to the chemical composition properties of the samples under different storage conditions. Chhana was prepared in a commercial setup and its shelf-life was tested under various temperature conditions. Immersion in whey proved effective in prolonging the shelf-life of Chhana. The Barayni model was found to be the most accurate, and the limitations of all three models were successfully overcome by a novel three-phase linearized growth model.

Summary: The study investigated the impact of milk composition on the attributes of Indian cottage cheese. Instrumental properties and sensorial descriptors were identified as key factors affecting the texture and sensory attributes of Chhana. Chhana made with 100% cow milk and 75% cow milk showed similar sensory attributes, while those made with 100% buffalo milk and 75% buffalo milk had similar mechanical attributes.

Summary: In this study, a reusable biobased composite hydrogel was successfully synthesized and used for the removal of Tl(I) from aqueous solutions. The hydrogel exhibited high adsorption capacity and thermal stability, and the adsorption process was found to be thermodynamically spontaneous. The results demonstrated that the hydrogel can be reused multiple times without significant loss of its adsorption capacity.

Summary: In this study, a unique 3D bead structure of adsorbent, composed of bacterial cellulose microfilaments reinforced chitosan adorned with melamine 2D plates, was synthesized for anionic dye removal. The adsorbent showed high specific surface area and abundant functional groups, resulting in exceptional adsorption capacity. The characteristics and optimal conditions of the adsorbent were assessed and analyzed.

Summary: The potential of multi-layer nanoemulsions for improving the cellular uptake, antioxidant activity, and in vitro bioaccessibility of alpha-tocopherol was examined. The results showed that the multi-layer nanoemulsions significantly enhanced the cellular uptake and antioxidant activity of alpha-tocopherol compared to free coumarin 6. Furthermore, the use of chitosan and dextran sulfate as wall materials in the multi-layer nanoemulsions led to even higher cellular uptake, in vitro bioaccessibility, and antioxidant activity of alpha-tocopherol.
