Improved postharvest quality of apple (Rich Red) by composite coating based on arabinoxylan and β-glucan stearic acid ester

Apples (Rich Red) were coated with wheat straw arabinoxylan (AX) and beta-glucan stearic acid ester (SABG) composite coating material in the concentration range of 1-2%. The postharvest storage life of coated apples was studied at 22 degrees C (+/- 2) with 65% and 85% relative humidity for 45 days. Application of both AX-SABG (1-2%) and shellac (1-2%) coatings material significantly reduced the weight loss, respiration process, color degradation, process of fruit softening and ripening index as compared to the uncoated apples up to 30 days storage. However, the AX-SABG coatings were found more effective in preventing the aroma loss, reducing microbial spoilage and maintaining sensorial attributes as compared to shellac and uncoated apples during storage. Summary: The quality characteristics of chhana are varied due to the milk composition and milking season. Water holding phenomena and denatured protein association affect the macroscale properties and molecular bonding patterns. Increasing proportion of buffalo milk in mixed milk leads to higher yield, lightness, textural firmness, and elastic modulus of chhana due to higher total solids and less moisture content. Total protein, fat, water, and their interaction significantly affect the rheological and textural properties of chhana samples.

Predictive microbial growth modelling for an effective shelf-life extension strategy of Chhana (Indian cottage cheese)

Summary: This study aimed to understand the microbial growth dynamics in Chhana (Indian cottage cheese) by using three different primary models (Logistic, Gompertz, and Barayni) to develop secondary models and relate them to the chemical composition properties of the samples under different storage conditions. Chhana was prepared in a commercial setup and its shelf-life was tested under various temperature conditions. Immersion in whey proved effective in prolonging the shelf-life of Chhana. The Barayni model was found to be the most accurate, and the limitations of all three models were successfully overcome by a novel three-phase linearized growth model.

Effect of milk composition on sensory attributes and instrumental properties of Indian Cottage Cheese (Chhana)

Summary: The study investigated the impact of milk composition on the attributes of Indian cottage cheese. Instrumental properties and sensorial descriptors were identified as key factors affecting the texture and sensory attributes of Chhana. Chhana made with 100% cow milk and 75% cow milk showed similar sensory attributes, while those made with 100% buffalo milk and 75% buffalo milk had similar mechanical attributes.

An eco-friendly composite hydrogel based on covalently crosslinked cellulose/poly (glycerol citrate) for thallium (І) removal from aqueous solutions

Summary: In this study, a reusable biobased composite hydrogel was successfully synthesized and used for the removal of Tl(I) from aqueous solutions. The hydrogel exhibited high adsorption capacity and thermal stability, and the adsorption process was found to be thermodynamically spontaneous. The results demonstrated that the hydrogel can be reused multiple times without significant loss of its adsorption capacity.
