Summary: This study showed that consuming a high protein product significantly lowered peak and Delta blood glucose concentrations compared to a high carbohydrate product. Insulin response did not show significant differences between the two foods. Fasting glucose was positively correlated with glucose iAUC only for the high protein product.

Summary: This study found that consumption of 15g of ground raw golden flaxseed can reduce the 2-hour postprandial glycemic response in men with T2DM. Although flaxseed does not affect peak glucose time, palatability, and taste parameters, it effectively lowers the rise in peak glucose levels and the AUC glycemic response within two hours.

Summary: The study investigated the effects of chitosan oligosaccharide (COS) on glucose metabolism and hepatic steatosis in diabetic rats, indicating that COS supplementation may alleviate abnormal glucose metabolism in diabetic rats through inhibiting hepatic gluconeogenesis and lipid peroxidation, as well as renal SGLT2 expression.

Summary: Postprandial hyperglycemia is associated with increased mortality risk in patients with type 2 diabetes and cardiovascular diseases. The gut microbiota has been found to be correlated with type 2 diabetes and cardiovascular disease. This study investigated the relationship between fasting and postprandial glucose levels and microbiota in older adults. The findings suggest that the individual pattern of microbiota may serve as a predictor for post-dinner hyperglycemia and abnormal glucose metabolism risk.

Summary: The effect of chitosan oligosaccharide (COS) on the quality of tomato during post-harvest storage was investigated. The results showed that COS treatment improved fruit quality by enhancing color, nutrient content, and flavor-associated volatiles. Additionally, COS treatment enhanced ethylene production and signaling, indicating its role in regulating fruit ripening and quality.

Summary: This study aimed to quantify the relationship of acute glucose and insulin postprandial responses with longer-term effects on diabetes-related risk factors through a systematic review and meta-analysis of dietary intervention studies. Results showed that changes in acute postprandial glucose responses were associated with changes in fasting plasma glucose, but not with fasting insulin. Further research is needed to fully understand the impact of acute postprandial changes on long-term risk factors.

Summary: This study investigated the role of coil overlap in predicting blood glucose and insulin responses. By using bread fortified with galactomannans of different molecular weights, it was found that galactomannans above coil overlap significantly reduced postprandial insulin response, while those below coil overlap had a smaller reduction. Further in vitro digestion experiments showed that breads with galactomannans above coil overlap had a greater proportion of slowly digested starch.

Summary: The study revealed a significant association between uric acid levels and markers of prediabetes, insulin resistance, and insulin sensitivity in overweight/obese youth. Higher uric acid levels were correlated with elevated markers of impaired glucose metabolism, particularly post-challenge conditions.
